Steps:

  • In a saucepan, add peanut oil and heat. When the oil is hot, add the shrimp and saute quickly, just until they start to turn pink, but are not cooked through. Remove the shrimp from the pan to a plate.
  • Add the garlic, ginger, green onion, lemongrass, apple, galangal, and bananas to the same pan and saute until soft with no color, about 4 minutes. Add cumin and curry powder and saute for 1 minute. Add the lemon, lime, and orange juice along with the tamarind paste, coconut milk, and cilantro. Bring to a boil and simmer for 20 minutes.
  • Strain the sauce and return to the heat. Add the Thai basil and kaffir lime leaves.
  • Place the shrimp in the sauce and cook until just heated through. Place some rice on each plate. Top the rice with 3 shrimp and surround with the sauce.
  • Rinse the rice 2 or 3 times and drain well. Set up a bamboo steamer on the stove. Place the rice in a metal bowl and fill with boiling water until the water is 1/2 inch above the rice. Place the bowl in the steamer and steam until tender, about 20 minutes.
  • Remove the cooked rice from the steamer and cool slightly. To the slightly cooled rice, add the butter, orange zest, cumin, and coconut. Stir until well mixed and add the saffron. Before serving, stir in the cilantro.

BAMBOO PIPE STEAMED COCONUT SHRIMP

This easy recipe is packed full of flavor! My parents were in the Air Force, traveled through Asia for years and brought back tons of recipes. To this day, we still cook our shrimp with bamboo steamers because of the ease and richness of the flavor imparted.

Bamboo Pipe Steamed Coconut Shrimp image

Steps:

  • Soak two 8-inch-long, 4 1/2-inch-wide bamboo steamer pipes in water for 15 to 20 minutes before using to prevent them from burning over an open fire. (See Cook's Note.) If the walls of the bamboo steamer pipes are at least 1 inch thick or if you are using a gas grill, this step is optional.
  • Place the shrimp in a medium bowl and sprinkle with the salt. Mix in the coconut milk, rice wine vinegar, ginger, soy sauce, sesame oil, green onion, cilantro, lemongrass and red chile flakes.
  • Prepare an open fire with grill grates or prepare a gas grill for 350 degrees F.
  • Fill the bamboo pipes with the shrimp mixture. Ensure the liquid fills the bamboo pipes at least three-quarters of the way up. Place the bamboo pipes directly on the grill grates over the open fire or directly on the grates of a gas grill at 350 degrees F. Remove the bamboo pipes when the shrimp are cooked through, after about 30 minutes. Allow to rest for 5 minutes. Drain the liquid from the bamboo pipes and reserve for the guests to use for dipping or smothering. Serve the shrimp over your favorite side or steamed white rice.

2 pounds medium shrimp in shells
1 teaspoon kosher salt
Two 14-ounce cans unsweetened coconut milk
2 tablespoons rice wine vinegar
2 tablespoons minced ginger
1 tablespoon soy sauce
1 tablespoon sesame oil
1 tablespoon chopped green onion
1 tablespoon chopped fresh cilantro
2 teaspoons grated or torn lemongrass
1 teaspoon red chile flakes
Steamed white rice, for serving, optional

Steps:

  • Trim ends from lemon grass, then bruise 3 stalks all over with back of a knife. Cut in half and place in saucepan with nam pla. Squeeze juice of 2 limes into pot, then toss in lime rinds. Top with shrimp, cover tightly, and turn heat to medium-high. Cook for 5 to 10 minutes, or until shrimp are pink and firm. Remove shrimp and chill.
  • Remove hard outer layers from remaining lemon grass stalk and mince tender core; you will get about a teaspoon. Combine this with chili, coconut milk, sugar and saffron in a small saucepan over low heat. Cook, stirring occasionally, until mixture is a uniform yellow. Remove chili and chill. Cut remaining lime into wedges.
  • Taste sauce and add salt if necessary. Serve cold shrimp topped with cold sauce and accompanied by lime wedges.

Steps:

  • Set a steamer basket into a heavy saucepan and pour in enough water, so the steamer basket sits just on top of the water without touching it. Remove steamer basket and bring water to a boil.
  • Meanwhile, butterfly the shrimp with a sharp paring knife, carefully running the knife 1 inch down the bottom of the shrimp without cutting all the way through. Press shrimp open.
  • Set shrimp into the steamer basket and sprinkle with salt. Set steamer basket over the boiling water (shrimp should not touch the water).
  • Steam shrimp until they are bright pink on the outside and the meat is opaque, carefully moving shrimp around using tongues so they cook evenly, about 5 minutes.
  • Serve immediately or chill for later use.

  • Heat 1 tablespoon of oil over medium heat in a small skillet. Add chopped shallot, ginger, lemon grass and chili. Stir-fry for 3 minutes or until fragrant and lightly colored. Scrape into a small food processor or blender. (don’t wash skillet – you’ll use it for the topping) Add coconut milk, fish sauce and 8 stems of cilantro. Process for 30 seconds or so, until everything is finely blended into a thick sauce.
  • *Arrange the fish fillets in a single layer on a heatproof plate or glass pie pan. Spread the coconut sauce evenly over the fish fillets. Place plate in a steamer and turn the heat to high. Once the water is boiling, cover tightly and steam fish for 6-8 minutes or until it’s just opaque. Test with a knife. If the knife goes in easily, with no resistance, the fish is done. Remove from heat and remove cover.
  • While the fish is steaming, line a plate with a paper towel. Heat remaining tablespoon of oil in the skillet over medium-high heat. When hot, stir-fry the shallots until browned, 3 minutes of so. Transfer to paper towel lined plate. Add the cilantro leaves and fry them for just a few seconds. Transfer them to the plate.
  • Carefully (I used two spatulas) transfer fish fillets to four plates.(I like to plate them over a bed of rice) Sprinkle with a tiny pinch of salt and a generous sprinkling of pepper. Scatter fried shallots and cilantro on top. Spoon extra sauce over the rice.
