HEALTHY BAKED STEEL CUT OATMEAL
Breakfasts have always been a challenge for me, so I created this recipe as a quick and portable way to have healthy breakfasts all week. I hope you enjoy it as much as I do. Feel free to experiment with different dried fruits and flavorings to your taste. I imagine that adding quinoa, hemp protein, flax seed or other nutritional supplements would taste great.

Steps:
- Bring milk to a boil in a saucepan; immediately reduce heat to medium-low. Stir oats and vanilla into the milk. Stirring occasionally, cook at a simmer until the oats are soft, about 20 minutes. Set aside to cool slightly.
- Mix bananas, eggs, and applesauce in a large bowl. Mix baking powder, cinnamon, and salt in a small bowl; stir into the banana mixture. Add oats mixture to the bowl; stir. Fold raisins through the oat mixture; pour into a 9x13-inch baking dish. Cover dish with plastic wrap; refrigerate 8 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Remove plastic wrap from baking dish and bake in preheated oven until golden brown, 45 to 60 minutes.

- In a large saucepot, melt the butter and add the oats. Stir for 2 minutes to toast. Add the boiling water and reduce heat to a simmer. Keep at a low simmer for 25 minutes, without stirring.
- Combine the milk and half of the buttermilk with the oatmeal. Stir gently to combine and cook for an additional 10 minutes. Spoon into a serving bowl and top with remaining buttermilk, brown sugar, and cinnamon.
BAKED STEEL-CUT OATS WITH NUT BUTTER
For a simple, filling breakfast, baked steel-cut oatmeal, enriched with almond butter and cinnamon, is a go-to recipe. This version is particularly adaptable: Use peanut butter or almond butter, steel-cut or cracked oats, or any number of warming spices that might be in your cupboard. Then, garnish as you wish.

- Heat oven to 350 degrees and bring a kettle of water to a boil.
- In a medium shallow casserole or baking dish, combine 3 cups boiling water and the nut butter and stir until smooth-ish. (Don't worry about a few lumps.) Stir in oats. Season the mix with a big pinch of salt, and some cinnamon or nutmeg if you like.
- Cover with foil and bake for 1 hour, stirring halfway through. Taste and if the oats aren't cooked enough, let it bake for 5 to 10 minutes longer.
- Garnish with whatever you like, and serve.
MAKE-AHEAD STEEL-CUT OATS
Because steel-cut oats take so long to cook, I came up with this recipe to make ahead and refrigerate overnight in 4 portions. It's very hearty, delicious, and wholesome!

Steps:
- Bring water and salt to a boil in a pot. Pour in oats and return to a boil while stirring. Reduce heat and let simmer until water is absorbed, 20 to 25 minutes.
- Remove oats from heat and immediately stir in walnuts and raisins. Stir in agave nectar, vanilla extract, and cinnamon.
- Divide oat mixture into 4 portions in bowls. Cover and refrigerate for 8 hours or overnight, up to 5 days.
- When ready to prepare, add 2 tablespoons milk to each portion. Heat in a microwave for 1 minute and 30 seconds, stirring halfway through cook time.
