CITRUS GLAZED SALMON

- Heat oven to 400°F. Line 15x10x1-inch pan with cooking parchment paper or foil. In small bowl, grate lime peel. Squeeze enough juice to equal 2 tablespoons; add to peel in bowl. Grate orange peel into bowl. Squeeze enough juice to equal 2 tablespoons; add to peel mixture. Stir in agave syrup, salt, pepper and garlic. In small cup, measure 1/4 cup citrus mixture for salmon (reserve remaining citrus mixture).
- On pan, place salmon fillets, skin-side down. Using 1/4 cup citrus mixture, brush tops and sides of salmon. Bake 13 to 17 minutes or until fish flakes easily with fork. Lift salmon pieces from skin with metal spatula onto serving plate. Sprinkle with green onions. Top each fish fillet with lime and orange wedges. Serve each fillet with 3 tablespoons reserved sauce.

- Glaze: Bring all of the ingredients to a boil in a medium-sized saucepan over medium heat, stirring to melt the preserves and to keep the mixture from burning. Reduce the heat to a simmer and let the glaze reduce until syrupy, about 15 to 20 minutes. Adjust the seasonings with salt and freshly cracked pepper, to taste.
- Salmon:
- Heat a grill to medium-high heat.
- Brush both sides of the fillets with olive oil just before grilling, then season with salt and pepper, to taste. Grill the salmon for about 4 minutes per side, brushing with the glaze during the final few minutes of cooking. Transfer the salmon to serving plates and brush them with the remaining glaze before serving.

- Position one oven rack 6 inches from the broiler heat source then heat the broiler. Season the salmon fillets all over with ½ teaspoon salt and a couple of grinds of pepper and place them on an aluminum foil-lined sheet pan, skin side down.
- In a small bowl, whisk the oil and mustard until well mixed. Brush the tops and sides of the salmon with this mustard mixture.
- Broil until the salmon is opaque with a deep brown crust, about 6 to 8 minutes for medium-rare. (The center of the fillets will be dark pink, if you pierce one with a paring knife and take a look.) If your fillets are thinner, reduce cooking time by 1 to 2 minutes. If you prefer more well-done fish, add 1 or 2 minutes to the cooking time.
- Squeeze a lemon wedge all over the cooked salmon fillets, then serve salmon with more lemon wedges on the side.

- Preheat grill to medium, about 400-450ºF (204-232ºC). Lay out a very large piece of heavy duty foil, enough to bring up long sides and close over salmon. If you are using cut salmon fillets, lay out individual large pieces of foil. Place salmon on, skin side down, and set aside.
- In a small microwave safe bowl melt butter. Add apricot preserves, whole grain mustard, and dijon mustard. Mix well. Remove 2 tablespoons of mustard sauce and set aside to use after salmon is cooked.
- Brush on remaining mustard sauce on top of the salmon. Fold up the longer sides and roll together with the seam on top. Roll up the shorter ends to close and make a packet.
- Place on grill, cover, and cook for 10 minutes. While salmon is cooking preheat broiler and place oven rack in top position. Open foil, brush reserved marinade on top and broil for 1-2 minutes, or until salmon is cooked completely and top starts to bubble.

- Heat the broiler with rack in top position. In a small saucepan, heat the olive oil over medium-high. Saute the onions until translucent. Add vinegar and cook until nearly evaporated.
