CRAB CRESCENT TRIANGLES

- Preheat oven to 375°. In a large bowl, beat cream cheese, mayonnaise and mustard until blended. Stir in cheese, carrot, celery, green onions and garlic. Gently fold in crab., Unroll crescent dough and roll into a 12-1/2x10-in. rectangle. Cut each sheet into twenty 2-1/2-in. squares., Spoon a heaping teaspoonful of cream cheese mixture diagonally over half of each square to within 1/2 in. of edges. Fold 1 corner of dough over filling to the opposite corner, forming a triangle. Pinch seams to seal; press edges with a fork. Place on ungreased baking sheets. Bake until golden brown, 8-10 minutes.

EASY CRAB TORTELLINI
Here's a super easy, super simple method for making stuffed pasta using wonton wrappers. If you'd rather call these crab wontons or crab dumplings (or even cheater tortellini!), go ahead. No matter what you call them, this is definitely something you want in your bag of culinary tricks. They're loaded with crab and the tortellini shape does a great job of catching and holding on to all the delicious sauce.

Steps:
- Crush crackers into a bowl. Add egg, mascarpone cheese, Dijon mustard, and Worcestershire sauce; stir until combined. Let sit until crumbs have absorbed some moisture, about 5 minutes.
- Add crab meat, seafood seasoning, salt, cayenne pepper, and jalapeno to the cracker mixture; stir until just combined. Wrap and chill in the refrigerator until flavors develop, about 1 hour.
- Place a wonton wrapper on a work surface to resemble a diamond shape. Wet the top 2 edges with just enough water to moisten. Place 1 tablespoon crab filling right in the center and press to spread it out a bit. Pull the bottom wonton corner up and over the filling, line it up with the top corner to form a triangle, and work your way down the sides, pressing and sealing the wonton edges and pushing out any air. Press your finger right in the center of the long side to create a fold (or bend) in the triangle. Moisten the 2 "wings" and fold around the bend to seal. Repeat to form remaining tortellini.
- Bring a pot of salted water to a boil.
- While waiting for water to boil, place creme fraiche in a skillet over medium heat. Add paprika, lemon zest, salt, and a splash of the pasta water. Cook and stir until heated through and just starting to simmer, then turn off the heat and reserve.
- Add tortellini to the boiling water, giving a gentle stir make sure they don't stick to the bottom. Cook for 1 minute; they may or may not float to the surface. Remove tortellini with a slotted spoon and transfer into the reserved sauce.
- Turn heat to medium-high and cook, gently stirring and basting, until sauce is heated through and just starts to simmer. Don't overcook or the sauce will reduce too much. Turn off the heat and stir in dill. Serve immediately on warm plates and sprinkle with additional dill and cayenne.

These appetizers are sooo delicious! Everyone is always asking for this recipe, even those who don't like crab. This recipe was handed down from my mother, and I don't know where she got it from. I guarantee that if you serve these at your next get together, they will be gobbled up.

Steps:
- Soften butter and cheese.
- Mix with other ingredients.
- Spread on muffin halves.
- Place on plate and freeze.
- When frozen transfer to zip-lock type bag, and keep in freezer.
- When ready to serve, cut into 4 or 6 triangles from each muffin half, depending on how many people you have.
- Bake at 350 degrees until lightly brown, about 10 minutes.

CRAB TRIANGLES
Steps:
- Soften butter to room temperature while preheating oven to 350 degrees F. Mix the cheese spread into the butter and stir in mayonnaise. Add garlic powder and stir unti all is completely blended - no lumps. Gently stir in crabmeat.
- Slice the muffins in half and divide the crab mixture on the 12 halves. Cut each half into quarters and place them on baking sheet.
- Bake in the oven until the cheese is bubbly and the edges are brown. Serve at once.

SPINACH & CRAB PHYLLO TRIANGLES
Steps:
- Directions: 1. In a skillet with medium heat melt 2 tsp. butter add onions garlic, spinach cook 3-4 minutes. With the back of a wooden spoon squeeze out any excess moisture. Combine mixture with cheese & crabmeat and Tuscan Sunset seasoning. 2. Place one sheet of phyllo dough on a cutting board .Lightly brush with some melted butter. Place another sheet of phyllo dough on top and brush with butter. {Keep remaining phyllo dough covered with plastic wrap until needed. 3. Cut the 2 layered sheets lengthwise into 3 equal strips, each 14 inches long. Spoon 1 well rounded teaspoon of filling about 1 inch from an edge of each strip. To fold into a triangle bring the corner over the filling so that the short edge lines with the side edge. Continue folding the triangle shape along the strip until the end reached.Tap along edge with folk to seal Repeat with remaining phyllo, butter, and filling. 4. Place triangles on a baking sheet brush with butter. Bake in a 375 degree F oven about 15 minutes or until golden brown. Serve warm. 5. Makes about 36 triangles {18 appetizer servings} 6. Make ahead directions: Prepare Phyllo Triangles through step 3. Place the unbaked triangles in a covered freezer container; freeze for up to 2 months. - Unroll crescent dough; separate into 8 triangles. Cut each triangle in half lengthwise, forming 2 triangles. - In a medium size mixing bowl, combine artichoke hearts, crabmeat, mayonnaise, onions, and cheese. Mix thoroughly.
