SIMPLE CUSTARD
This is my own alteration of a few different recipes. Not too rich or too sweet as many egg custards can be. Can be served warm immediately or cold.

Steps:
- Cook and stir milk, vanilla extract, and butter in a saucepan over medium heat until simmering. Remove mixture from heat before it comes to a boil.
- Whisk eggs, sugar, and cornstarch together in a bowl until sugar dissolves.
- Set saucepan back over low heat. Pour in egg mixture slowly, whisking constantly, until custard thickens enough to coat the bottom of a spoon, 5 to 10 minutes.

EGG CUSTARD
This is one of my favorite foods when I am feeling blah. It is sweet and comforting and full of mild protein. Use custard cups or one casserole bowl.

Steps:
- Preheat oven to 325 degrees F (165 degrees C).
- Whisk milk, eggs, sugar, salt, and vanilla together in a bowl until completely combined. Pour egg mixture into 6 custard cups; sprinkle tops with nutmeg. Place cups in a baking pan and fill pan with enough hot water to reach halfway up the sides of the custard cups.
- Bake in the preheated oven until custards are set, about 1 hour. Cool completely.

OLD FASHIONED STIRRED CUSTARD
Custard should be very soft and fluid, almost like a sauce. It can served cold or hot. Baked custard will a little firmer.

Steps:
- Place milk in top of a boiler; bring water to a boil. Cook until milk is thoroughly heated. Set aside.
- Beat eggs at medium speed with a electric mixer until frothy. Add sugar and flour, heating until thick. Gradually stir about 1 cup hot milk into yolk mixture; add to remaining milk, stirring constantly. Cook custard mixture in double boiler over low heat, stirring occasionally, 30 minutes or until thickened. Stir in vanilla. Serve warm or cold.
- Baked custard: Pour custard mixture into 6 (6ounce) custard cups in a 13x9x2 inch baking pan, pour hot water to a depth of 1 inch into pan.
- Bake at 350°F for 35 to 40 minutes or until knife inserted in center comes out clean. remove cups from water. Serve warm or cold.

STIRRED CUSTARD SAUCE

Steps:
- In a 1-cup measure stir together egg yolk, light cream, sugar and salt.
- Micro-cook, uncovered, on 50% power for 1 1/2 to 2 minutes or till mixture is thickens slightly, stirring every 30 seconds.
- Place the 1-cup measure in a bowl of ice water and stir egg yolk mixture for 2 minutes.
- Stir in Galliano, brandy or Ameretto and vanilla.
- Cover surface of mixture with clear plastic wrap refrigerate till serving time.
- To serve, spoon over one of the above fruits or a mixture of the above fruits.
- NOTE:
- Cool the custard mixture for Stirred Custard Sauce by placing the glass measure inside a larger bowl filled with ice water.
- After stirring the mixture, stir in the Galliano, brandy or Ameretto and the vanilla.
- Adding these ingredients at this stage speeds the cooling of the custard and helps prevent curdling.
- Be sure to place clear plastic wrap directly on the surface of the custard before it is refrigerated.
- Covering the surface will prevent a "skin" from forming on the top of the Custard Sauce.

CUSTARD SAUCE
I serve this sauce, along with my recipe #56293 for Rum Sauce (which is VERY rich) over my Christmas Pudding. Its also good over other puddings & fruit.

- Combine all ingredients, except vanilla, in a heavy pot.
- Cook, over medium heat, stirring constantly, until mixture thickens& will coat the back of a spoon.
- Remove from heat.
- Stir in vanilla& refrigerate in a covered container.

- Combine the cream, milk and vanilla in a saucepan. Bring to the boil then remove from the heat.
- In a large bowl, whisk together the sugar and egg yolks, until the mixture has gone pale in colour and doubled in size.
- Temper hot milky mixture into the sugar yolk mixture, by slowly adding hot milky mixture about 60ml (1/4 cup) at a time, whisking to distribute heat. Once half of the milky mixture has been added, transfer mixture back into the saucepan with the remaining milky mixture.
- Place the saucepan over low heat. Stir continuously until mixture reaches nappé consistency, or 80°C (180°F) on a kitchen thermometer.

- Cook and stir continuously with the wooden spoon over medium heat until mixture just coats the back of a clean metal spoon. Remove pan from heat. Stir in vanilla.
- Quickly cool custard by placing saucepan in a large bowl of ice water for 1 to 2 minutes, stirring constantly.
- Pour custard mixture into a bowl. Cover the surface with plastic wrap to prevent a skin from forming. Chill at least 2 hours or until serving time. Do not stir. If desired, serve custard over fresh fruit. Makes about 8 servings.

- Pour milk into a medium-sized sauce pan and heat to the point where the milk begins to scald. Remove from heat.
- Very slowly, drizzle about half of the milk into egg yolk mixture, stirring constantly until the eggs are tempered. Then add tempered eggs back to the rest of the scaled milk.
- On low to medium heat cook mixture stirring continually watching to make sure it does not get too hot. If it does, the eggs will congeal and cook. (If you have to, keep removing the pan from the heat, stirring as you go.) Continue this for about five minutes or until mixture thickens. Immediately remove from heat, then add vanilla and stir.
