Healthy Strawberry Banana Muffins image

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a muffin tin with paper liners.
  • Sift whole wheat flour, quinoa flour, baking powder, baking soda, and salt into a large bowl.
  • Combine bananas, strawberries, honey, oil, egg, and vanilla extract in a blender; blend until small chunks remain or mixture is completely smooth. Pour over whole wheat flour mixture; mix until batter is combined.
  • Spoon batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Transfer to a wire rack to cool.

Strawberry Banana Muffins image

Steps:

  • Preheat oven to 375 degrees F. Line a muffin pan with paper liners.
  • Combine the butter, milk, and egg in a small bowl and beat it lightly. In a larger bowl, pour in your flour, salt, baking powder, and sugar and gently mix it. Toss in the chopped strawberries and sliced banana, then stir to coat with the flour mixture. Pour in your milk mixture and stir it all up together.
  • Fill up the muffin cups with your batter, then place in the oven and bake for 25 to 30 minutes.
  • Let them cool down for 10 minutes, then remove from the pan and serve these bad boys up.

Banana Strawberry Muffins image

Steps:

  • Preheat oven to 375°.
  • Line 12 muffin cups with paper baking cups.
  • Combine sugar, oil and eggs and blend well.
  • Stir in bananas and vanilla.
  • Lightly spoon flour into measuring cup and level off.
  • Add flour, baking soda and salt to sugar mixture and stir just until combined.
  • Stir in strawberries.
  • Spoon batter evenly into lined muffin cups.
  • Bake for 17 to 21 minutes or until toothpick inserted in center comes out clean.
  • Immediately remove from muffin cups.

Strawberry Banana Muffins (Gluten-Free) image

Steps:

  • Preheat oven to 350°F Lightly oil a mufffin tin or fill with paper liners.
  • In a large bowl, sift together the rice flour, potato starch, tapioce flour, xanthan gum, cinnamon, baking soda, baking powder, and salt. Stir to mix.
  • In a separate bowl, cream together the butter and sugar until smooth. Beat in the eggs ans add the vanilla and milk, stirring well. The mixture will be quite lumpy.
  • Mash the bananas and fold them with the strawberries into the wet ingredients. Mix the wet ingredients into the dry ingredients to form a thick batter.
  • Spoon a generous 1/3 cup of batter into each muffin cup. Bake for 25-30 minutes. After about 15 min, turn the tin to ensure even baking. Insert a paring knife into a muffin; when the blade comes out clean the muffins are done.
  • Place the tin on a cooling rack for a few minutes, the remove the muffins from the tin and place them on rack. Serve warm or at room teomperature. Cool completely before storing in an airtight container.
