Steps:
- Make a simple syrup: Add the sugar and 1 cup water to a small saucepan and heat over low heat until the sugar is dissolved. Transfer to a container and allow to cool completely in the fridge, about 45 minutes.
- Add the strawberries and lemon juice to a blender with the cold simple syrup; blend until smooth. Strain through a fine-mesh strainer to remove the seeds. Transfer to a pitcher and chill until ready to use.
- To serve, add about 2 tablespoons of the strawberry puree to a champagne flute and top off with the chilled rose.

- Bring sugar and water to a boil. Simmer until the sugar dissolves. Remove from the heat and allow to cool.

- Blend the strawberries until smooth then strain through a very fine sieve or cheesecloth to get as many of the seeds out as possible. Add the sugar, half at a time, tasting to see if it's roughly the sweetness you'd want then add more as needed.
- Divide the strawberry puree between two glasses, filling up to a little under halfway. Top the glasses with prosecco, a little at a time as it will bubble up a lot. Gently stir to mix and serve.
