STRAWBERRIES & CREAM BREAD (STRAWBERRY OR BLUEBERRY)
A wonderful recipe using fresh strawberries from Netherhill Strawberry Farm in Australia. This recipe also yields a tried and true (and reviewed) great Blueberry & Cream Bread.

Steps:
- Combine flour, baking powder, baking soda, salt and cinnamon; set aside.
- In small bowl, beat butter until creamy. Gradually add sugar, beat 1 minute or until light and airy. Add brown sugar. Beat in eggs, one at a time. Beat in sour cream and vanilla.
- Stir into flour mixture only until dry ingredients are moistened.
- Fold in strawberries and nuts.
- Pour into a greased 8 x 4 inch loaf pan.
- Bake at 350°F for 60 to 65 minutes or until toothpick comes out clean.
- Let stand 10 minutes in pan.
- Turn out on rack to cool.

STRAWBERRY BLUEBERRY BREAD
Who doesn't love blueberries and strawberries in their bread? I do! The original recipe called for just strawberries, but I had some blueberries, so I threw some in. Bread should be refridgerated.

Steps:
- Using an electric hand mixer, combined butter, sugar and cream cheese. Mix in the eggs 1 at a time, then stir in the vanilla.
- Mix together flour, baking powder, baking soda and salt. Combined all ingredients. Add in Buttermilk, stir. DO NOT OVERMIX. Fold in Strawberries and blueberries.
- Preheat oven to 350. Grease a 9x5 loaf pan. Bake 67 min. Allow to cool in pan 20-30 min. before slicing

- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Mix flour, sugar, baking powder, and salt in a large bowl. Stir milk, oil, egg, and vanilla extract into flour mixture until batter is just blended. Gently fold blueberries into batter; pour into prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 70 minutes.

BLUEBERRY-STRAWBERRY CRISP

- Heat oven to 375°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
- In medium bowl, toss blueberries, strawberries, 1/2 cup granulated sugar, 1/3 cup flour, the nutmeg, vanilla and salt. Spoon into baking dish.
- In separate medium bowl, mix 1/2 cup flour, the oats, 1/3 cup granulated sugar, the brown sugar and cinnamon. Cut in butter, using pastry blender (or pulling 2 table knives though ingredients in opposite directions), until mixture looks like coarse meal. Sprinkle over berry mixture; spray topping with butter-flavor cooking spray.
- Bake 40 minutes or until topping filling is bubbly and is golden. Serve warm with ice cream.

STRAWBERRY BREAD
My husband and I are strawberry lovers, so each spring we pick about 30 quarts. This recipe makes two delicious loaves. One we eat right away; the other we freeze and pull out when family comes to visit.

- In a large bowl, combine flour, baking soda, sugar, cinnamon and salt. Add egg, egg whites and oil; stir just until moistened. Fold in strawberries and nuts. Spoon into two greased 8x4-in. loaf pans. , Bake at 350° for 70 minutes or until bread tests done. Cool in pans 10 minutes before removing to a wire rack.

- Preheat the oven to 350 degrees. Lightly grease a 8x4-inch loaf pan with cooking spray. Line with parchment paper so that you have some overhanging the sides like "handles" then lightly grease again. Set aside.
- In a medium bowl, combine the white whole wheat flour, cinnamon, salt, and baking soda. In a separate bowl or large measuring cup, stir together the sugar and melted coconut oil (this will help keep the oil from resolidifying). Stir in the Greek yogurt, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients, then stir together by hand with a rubber spatula, just until evenly combined—do not over mix. The batter will be very thick. Fold in the diced strawberries.
- Scrape the mixture into the prepared baking pan and smooth the top. Bake for 45 to 55 minutes, until a toothpick inserted in the center comes out clean. At the 30 minute mark, lightly tent the bread with foil to prevent it from browning too quickly, then continue baking as directed. Remove the pan from the oven, uncover, then set the pan on a wire rack. Let bread cool in the pan completely before slicing (or slice warm and have a messy, yummy pieces of strawberry bread).
