Key lime pie meets cheesecake in this easy-to-make, easy-to-eat, no-bake layered dessert.

Steps:

  • Spray an 8-inch square baking dish lightly with nonstick cooking spray. Combine the butter, granulated sugar and 1 1/2 cups of the crushed graham crackers in a medium bowl. Press the mixture into the prepared baking dish and freeze for 15 minutes to set.
  • Combine the cream cheese, confectioners' sugar, salt, lime juice and two-thirds of the zest in a large bowl. Beat with an electric mixer on medium-high speed until fluffy, about 3 minutes. Fold in 3/4 cup whipped topping to lighten. Pour the filling over the crust and smooth with an offset spatula. Refrigerate for 15 minutes to partially set.
  • Meanwhile, mix the instant pudding powder, milk and key lime juice in a bowl. Whisk until thick, about 2 minutes. Pour over the filling. Top with the remaining whipped topping, cover and refrigerate for 2 hours to set.
  • Top with the remaining graham cracker crumbs and lime zest before serving.

6 tablespoons unsalted butter, melted
1/4 cup granulated sugar
2 cups graham cracker crumbs (from about 16 graham cracker sheets)
One 8-ounce package cream cheese, at room temperature
5 tablespoons confectioners' sugar

Juice and zest of 1 lime
One 12-ounce container frozen whipped topping, such as Cool Whip, thawed
One 3.4-ounce package instant vanilla pudding
1 cup milk
1/4 cup key lime juice

This no-bake layered dessert has all the trappings of a classic strawberry shortcake. Crunchy shortbread cookie crumbs stand in for the crust. Layers of creamy filling, fresh strawberries and pudding take it to another level.

Steps:

  • Make cake mix as directed on package, using cold water. Cool cake completely. Cut cake horizontally into 3 layers. Place bottom layer, cut side up, on serving plate.
  • In large bowl, beat milk, lime juice and lime peel with wire whisk until smooth and thickened. Fold in whipped topping.
  • Spread 1 cup lime mixture evenly over top of first layer of cake. Place second layer of cake carefully on bottom layer; spread evenly with 1 cup lime mixture. Top with remaining layer of cake.

  • 1 RESERVE 5 strawberries. Mash remaining strawberries in large bowl; stir in lime juice. Add dry pudding mix; stir 2 min. Gently stir in Cool Whip.
  • Cut cake into cubes. Layer in 13x9 pan, cake, filling, cake and end with filling.
