SWEET RICOTTA AND STRAWBERRY PARFAITS

with its creamy texture and a quarter of the fat of traditional whipped cream, ricotta cheese make delightful parfaits with the nutritional benefits of calcium, protein, and antioxidants from the berries source unknown

Sweet ricotta and strawberry parfaits image

Steps:

  • in medium bowl mix strawberries, sugar, and the 1 tablespoon snipped mint. Gently stir to mix. Let stand about 15 minutes or until berries soften and start to release their juices.
  • In another medium bowl mix ricotta, agave nectar, vanilla and lemon peel. Beat with electric mixer on medium speed for two minutes.
  • To assemble parfaits, scoop 1 tablespoon of the ricotta mixture into each of six parfait glasses. Top ricotta mixture in each glass with a large spoonful of the strawberry mixture. Repeat layers with the remaining ricotta mixture and strawberry mixture. Garnish with additional fresh mint. Serve at once or cover and chill for up to four hours makes six servings.

- 1 pound fresh strawberries, trimmed and halved or quartered
- 1 teaspoon sugar
- 1 tablespoon snipped fresh mint
- one carton part skim ricotta cheese, 15 ounces
- 3 tablespoons light agave nectar
- 1/2 teaspoon vanilla
- 1/4 teaspoon finely shredded lemon peel

Strawberry-Ricotta Parfait image

Steps:

  • Mix ricotta, vanilla and sugar in a bowl. In another bowl, mix strawberries, mint and vinegar. Spoon 2 tablespoon ricotta mixture into the bottom of 4 parfait or iced tea glasses. Add a layer of crackers, strawberries and another layer of ricotta. Top with remaining strawberries and mint sprigs. Serve immediately or chill up to 4 hours.

15 ounces lowfat ricotta
2 teaspoons vanilla extract
1 tablespoon granular Splenda (or other sugar substitute, or brown sugar to taste)
4 cups fresh strawberries, hulled and sliced, or 1 cup frozen, sliced
1/4 cup packed fresh mint, chopped, plus 4 sprigs
2 tablespoons balsamic vinegar
1/2 cup crushed whole-wheat graham crackers

Steps:

  • In a small bowl, whisk the ricotta cheese and yogurt together until smooth. In each parfait glass, layer 2 tablespoons of the ricotta mixture, 1 tablespoon raspberry jam and 1/4 cup of granola. Repeat the layers. Spread the remaining ricotta mixture on top and garnish with toasted almonds before serving.

Balsamic Strawberries with Ricotta Cream image

Steps:

  • Put the ricotta cheese, honey and vanilla extract into the small bowl of a food processor and process until smooth, about 1 minute. Transfer to a small bowl and refrigerate for at least 2 hours.
  • In a small saucepan combine the vinegar and sugar and bring to a boil. Simmer over medium heat for 2 minutes, stirring occasionally. Allow to cool completely.
  • In a medium bowl, toss the berries with the basil and the balsamic syrup.
  • Divide the cream among 4 cocktail glasses, top with the berry mixture and serve.

  • Good source of: Protein, Vitamin K, Calcium, Phosphorus, Selenium
