FAJITA PITAS
I was late coming home one evening and forgot to pick up tortillas for the fajitas we planned for dinner. So we used pita bread that I had in the freezer instead. The warm chicken-filled pockets, garnished with a homemade sauce and other tasty toppings, are often requested when we're hungry for something in a hurry. -Diana Jones, Springtown, Texas

Steps:
- Preheat oven to 325°. For salsa, combine first 4 ingredients; stir in 1 tablespoon oil., Brush pepper halves and onion slices with remaining oil. Sprinkle chicken with salt and pepper. Place vegetables and chicken on an oiled grill rack over medium heat. Grill, covered, until vegetables are tender and a thermometer inserted in chicken reads 165°, 4-6 minutes per side., Cut vegetables and chicken into strips; toss with cheese. Spoon into pita halves; place on a baking sheet. Bake until cheese is melted, 5-7 minutes. Serve with salsa and, if desired, guacamole and sour cream.

JALAPENO BITES
Steps:
- Preheat the oven to 350 degrees F.
- Mix the cream cheese, Parmesan, jalapenos and egg to form a paste. Shape into balls using about 1/2 tablespoon of paste for each. Roll the balls in the breadcrumbs. Place on an un-greased baking sheet and bake for 10 to 15 minutes, until golden brown. Serve warm.
JALAPEñO BITES
These are a bit reminiscent of stuffed jalapeño peppers but much easier to make. I found this in the Junior League Celebrations cookbook.

Steps:
- Preheat oven to 350°F.
- Combine the cream cheese, Parmesan, jalapeño peppers and egg yolks in a bowl and mix to form a paste.
- Shape a 1/2 tablespoonful at a time into 1/4-inch rounds and roll in the bread crumbs.
- Place on an ungreased baking sheet and bake for 10-15 minutes or until golden brown.
- Serve warm.

STUFFED JALAPENOS
These stuffed jalapenos make a great party appetizer. The recipe can easily be doubled for a crowd.

- Preheat oven to 450 degrees. In a small bowl, mix together cream cheese and cheddar. Season with salt and pepper. With a small spoon, fill each jalapeno half with about 1 tablespoon cheese mixture. Place peppers on a parchment-lined baking sheet and bake until cheese is browned and bubbling, about 10 minutes, rotating sheet halfway through.

FETA STUFFED JALAPENOS
I saw these beautiful red Jalapenos and couldn't resist them but not sure what to do with them - I found a recipe on the internet by "Claire". Tweaked it a bit. Depending on the size of your peppers you may need a bit more oil & vinegar (keep it in proportion)they must be covered with the oil/vingar while marinating. Simple and Oh so tasty Prep time does not inclued the minimum 4 hours marinating

Steps:
- Place the cleaned peppers in a jar or a bowl and cover them with the Olive oil & vinegar.
- Cover and place in the fridge for at least 4 hours or overnight.
- Preheat oven to 350.
- Drain the peppers and place them on a baking sheet single layer.
- Bake for 10 minutes or only long enough to soften them-do not let them brown.
- Cool and set aside.
- Mix together the feta & cream cheese.
- Fill each pepper with the cheese mixture.
- Serve as an appetizer or as a side dish with
- any meal.

- Preheat oven to 400°. Cut jalapenos in half lengthwise; remove seeds and membranes. In a large saucepan, boil peppers in water for 5-10 minutes (the longer you boil the peppers, the milder they become). Drain and rinse in cold water; set aside., In a small bowl, beat the cream cheese, cheddar cheese and Worcestershire sauce until smooth. Spoon 2 teaspoonfuls into each jalapeno; sprinkle with bacon. Arrange on greased baking sheets. Bake until filling is warmed, 3-5 minutes.
