SUAN RONG JIANG DOU (GARLIC-FRIED GREEN BEANS)
Taken from Ji Pin Su Shi (Best Vegetable Dishes), a 30-cent, 5-in-square, paperback cookbook from Wal-Mart in China. Simple, home-style Chinese fare. Chinese cooks are expected to determine the proportions of condiments and seasonings. Everything is "ge shi liang"--to taste. I've suggested amounts, but if they don't seem right, just trust your own tastebuds. China has several varieties of green beans, and they go by different names in different parts of China. I think 'jiang dou' may refer to the yard-long beans, but any variety should taste good in this recipe. The amount of garlic listed strikes me as over the top. Try it if you dare. I'll be using less.

Steps:
- Wash beans, cut into 3-cm segments, boil until crisp-tender, and drain.
- Over highest heat, heat empty wok, add oil and swirl to heat. Add part of the garlic and stir a moment until fragrant but not burned. Add green beans and stir-fry.
- Add sugar, soy sauce, vinegar, salt, and MSG, tossing after each addition. Add remaining garlic, toss.
- Transfer to serving platter, and serve as part of a Chinese meal: rice, soup, and a balanced variety of dishes--one per person.

QING CHAO HE LAN DOU (STIR-FRIED SNOW PEAS)

Steps:
- Snap ends from snow peas, wash and drain.
- Peel carrot and thinly slice into rounds.
- Heat empty wok over highest heat. Add oil and swirl to heat. Add snow peas and carrots and stir-fry.
- Season with salt and msg.

SPICY WOK-CHARRED SNOW PEAS
High-heat stir-fries are ideal for peas - either snow peas or the sugar snap variety. Assertive seasoning and the slight charring from the wok complement the peas' sweetness wonderfully. The method works well for other spring vegetables, too, like asparagus or baby bok choy clusters. Use a wide cast -iron pan if you don't have a wok. Take care to avoid overcooking; the peas should be a vibrant green color and firm to the bite.

Steps:
- Put vegetable oil in a wok over high heat. When oil looks wavy, add chiles and let sizzle for a few seconds.
- Add snow peas and scallions and season well with salt and pepper. Cook vegetables over high heat, stirring constantly, until cooked through and lightly charred, 2 to 3 minutes. Peas should be bright green and crisp-tender.
- Add garlic, ginger and sesame oil, toss well and cook 1 minute more. Transfer to a serving platter and sprinkle with peanuts and cilantro.
