- Sprinkle gelatin on canned pineapple juice (don't use fresh or frozen). Wait one minute until gelatin softens, then heat gently until melted and clear.
- Remove from heat and stir in undrained, canned crushed pineapple. Sweeten to taste, if desired. Transfer to covered jars and store in the refrigerator.

- In a bowl, combine cracker crumbs and butter. Press into an ungreased 9-in. square dish. Refrigerate until firm. , In a bowl, combine gelatin and water; stir until dissolved. Cool to room temperature. In a blender, combine the cottage cheese and sugar substitute; cover and process until smooth. Slowly add gelatin mixture and blend until smooth. Pour into crust. Refrigerate until firm. , Meanwhile, in a saucepan, combine cornstarch and water until smooth. Add pineapple. Bring to a boil. Cook and stir for 2 minutes or until thickened. Cool to room temperature. Spread over gelatin layer. Refrigerate for at least 1 hours before serving.

- Drain pineapple, reserving juice. Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Add ice cubes and reserved pineapple juice; stir until gelatin is slightly thickened. Remove and discard any unmelted ice.
- Remove 1-1/2 cups of the gelatin; pour into medium bowl. Stir in drained pineapple. Refrigerate 4 hours or until firm.
- Meanwhile, refrigerate remaining gelatin 15 min. or until slightly thickened. Add COOL WHIP; whisk until blended. Spoon into 9 serving glasses. Refrigerate 4 hours or until firm.
- Use fork to break fruited gelatin into small flakes; spoon over gelatin in serving glasses before serving.
