Sunny's Quick Cabbage Sauteed Salad image

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the celery seeds and let cook for 1 to 2 minutes to bloom. Add the carrots and cook for 2 to 3 minutes. Add the cabbage, then season with salt and pepper and continue to cook until the cabbage is wilted but still has a little bite to it, about 5 minutes.
  • Place the onion in a medium bowl. Add the honey, sambal and vinegar. Mix together to coat and let sit for 5 minutes. Add the onion mixture to the skillet and mix in. Transfer to a serving bowl.

Sunny's Simple Red Cabbage Kraut image

Steps:

  • For the flavor base: To a large pan with straight sides or a stockpot, add the beer, sugar, vinegar, red pepper flakes, liquid smoke, garlic and peppercorns. Turn the heat to medium high and stir to dissolve the sugar.
  • For the braise: Stir in the onions and cabbage. Heat until the liquid begins to boil. Turn down the heat and allow the vegetables to simmer, stirring occasionally, until the cabbage is tender, 35 to 45 minutes. Serve warm or chilled.

4 cups beer (your favorite beer, as long as it's not too chocolatey dark)
3/4 cup sugar
3/4 cup apple cider vinegar
2 teaspoons red pepper flakes
1 teaspoon mesquite liquid smoke
4 cloves garlic, grated on a rasp or finely minced

Sunny's Easy Slow Cooker Sauerbraten image

Steps:

  • For the marinade: Season the beef on all sides with salt. Place in a large plastic bag (turkey bag!) and add the onions, red wine vinegar, pickling spice blend, honey, peppercorns and 1 cup water. Marinate, refrigerated, for 2 days.
  • For the sauerbraten: Remove the beef from the marinade and reserve the marinade. Pat the beef dry. Sprinkle the flour on all sides of the beef. In a large pan on high heat, add the oil. When it begins to swirl and smoke, add the beef. Sear on all sides to a deep golden brown, 6 to 8 minutes; don't forget the ends!
  • Add the beef to a slow cooker and pour in the reserved marinade and red wine. Cook on low for 8 hours, until the meat is tender but not falling apart.
  • Remove the beef, tent loosely with foil and rest for 10 minutes. Turn the slow cooker to high and reduce the liquid slightly, 10 to 15 minutes.
  • Slice the beef and serve with the sauce, boiled potatoes and Sunny's Simple Red Cabbage Kraut.

SUNNY SAUER-CABBAGE

This started out as leftovers, but looked so pretty cooking up, and tasted so nice, that I had to post it here. The ribboned carrot turns plain old cabbage beautifully golden, hence the "Sunny" part of the recipe. Sauerkraut gives this a bit of vinegary bite that is a great match for main dishes with sweet sauces or marinades.

Sunny Sauer-Cabbage image

Steps:

  • Core cabbage and cut into 1 cm wide ribbons.
  • Use a vegetable peeler to make long ribbons from the carrots (the cores will be difficult to ribbon; reserve for other use).
  • Heat olive oil in a large frying pan. Add caraway seeds and cook for a few seconds, until their color starts to change.
  • Add garlic and cook for 30 seconds, then add cabbage. Cover and cook 5 minutes, until cabbage is slightly softened (but still crisp).
  • Mix in carrots and sauerkraut, re-cover, and cook until carrot ribbons are tender (one to two minutes). If there is excess liquid, cook uncovered in this step, until liquid is evaporated.

Quick Sauerkraut with Grilled Brats and Mustard Bar image

Steps:

  • Preheat a grill for direct and indirect cooking.
  • Toss the cabbage with the shallots, vinegar, brown sugar and 1 tablespoon salt in a large microwave-safe bowl. Cover the bowl with plastic wrap and microwave on high for 5 minutes. Stir well and let stand for 15 minutes.
  • Meanwhile, place the brats on the indirect heat portion of the grill and grill, turning occasionally, until the internal temperature reaches 160 degrees F, 15 to 18 minutes. Move the brats over to the direct side of the grill and cook, turning occasionally, until lightly browned on all sides, about 5 minutes.
  • While the brats finish grilling, melt the butter in a large skillet placed directly on the grill. Add the caraway seeds and cook, stirring, until fragrant, about 1 minute. Add the sauerkraut and stir until well coated. Stir in the dill if using.
  • Serve the bratwursts with the sauerkraut and assorted mustards on the side.

Grace note: Don't be scared of fermentation. Good bacteria do all the work in this simple project that turns out crisp, tart kraut with a minimum of effort. Green or red cabbage both work great, though of course the resulting color of the kraut will vary accordingly. Feel free to get creative with seasonings -- horseradish, fennel seed and caraway are all classic additions -- but do not vary the proportions of salt to vegetable.

  • Prepare a jar: Thoroughly wash and dry a wide-mouth quart mason jar in hot, soapy water.
  • Prepare the cabbage and carrots: Cut the cabbage into quarters and cut out the core. Slice the cabbage as thinly as possible, working from crown to stem end. Place shredded cabbage into a large nonreactive bowl. Grate your carrots or other vegetables with a box grater, and add to the cabbage. Add the salt and mustard. Using your hands, toss to combine all ingredients, crushing the mixture until it begins to release liquid, about 5 minutes.
  • Pack the sauerkraut: Place a wide-mouth funnel in the mouth of the jar. Pack the mixture into the jar, pressing down to squeeze out as much air and release more liquid. Tightly packed, there should be just enough to fill the quart jar to the shoulder, and liquid should rise above the cabbage mixture. Fill a smaller jar, like a half-pint or four-ounce jar, with water and seal. Place on top of the cabbage mixture to keep it submerged under the juices.
  • Ferment the sauerkraut: Cover the jar with a clean towel, and allow to stand at room temperature. Check daily to make sure the cabbage is still submerged in liquid. If it is not, give the mixture a good press to release more juices. If the cabbage still does not stay submerged, add just enough water to bring the level up. After two or three days you should see bubbles forming. Eventually you may see scum or even mold on top. This is normal; just skim it away. Begin tasting your kraut after the third day. When it has reached the desired level of tartness, remove the smaller jar, screw on a lid, and keep the kraut several weeks in your refrigerator.

  • Preheat oven to 375 degrees
  • Melt butter in a heavy casserole. Add mushrooms and saute over high heat until mushrooms begin to brown.
  • Lower heat to medium, stir in onion and garlic and saute until they are tender. Add cabbage, sauerkraut, chicken broth and wine. Mix to distribute the ingredients. Season with salt and pepper.
