SUPER EASY MAKE AHEAD APPETIZER: FIG COMPOTE AND CHEESE
Found this Appetizer at an end of Year function what we went to in 2006 and it's so ridiculously EASY, but sophisticated and yummy to boot... Only two ingredients and they go sooo well together ! We had it served in individual glasses, so pop them in the fridge and forget about it until it's time to mingle with our guests. We had a variety of cheese 'sticks" : cumin, clove infused, old cheese, but any firm cheese will do perfectly. Serving size depends on how big your cheese sticks are and how much compote you like to put into your glasses. Since Figs are typically a very southern European fruit I will put this into ZWT Region: Spain.

Steps:
- Spoon about a tablespoon of the Fig Compote neatly into the bottom of each small drinking glass.
- Take the block of cheese and cut it into sticks about 10 cm (4 inches) long by 2.5cm (1 inch) wide and at least 1.5 cm (1/2 inch) so that the sticks don't break in half too easily.
- Stand 3 cheese sticks in the glass in the compote so that each guest has an individual serving to dip and eat.
- Refrigerate until needed. Circulate with your guests! Enjoy!

ZURIE'S FRESH FIG COMPOTE OVER CREAM CHEESE
This is a great way to use up some fresh figs. It is such an easy and popular appetizer in our home. We serve this with buttery crackers.

Steps:
- Heat a saucepan over medium heat; add brown sugar, water, salt, and figs. Cook and stir until sugar has dissolved and figs have softened, about 10 minutes. Remove from heat; stir in vanilla extract. Cool for 5 minutes.
- Place cream cheese on a platter; pour fig mixture over cream cheese.

FIGS STUFFED WITH GOAT CHEESE
Here's a super-simple appetizer. Fresh figs are halved and stuffed with any creamy, flavorful cheese. A good blue works, but creamy goat cheese, drizzled with balsamic vinegar, is even more crowd-pleasing.

- Use your fingers to roll the goat cheese into 24 1/2 teaspoon-sized balls.
- Cut figs in half. Press a cheese ball into the center of each fig. Plate them and drizzle with vinegar. Serve within an hour.

Steps:
- peel the orange and cut into sections over a bowl.
- squeeze the sections to release the juice, add figs and sugar.
- let it stand for 10 minutes in a medium saucepan, add the fruit and remaining ingredients.
- bring to a boil, reduce heat to simmer and cook for 15 minutes until most of the liquid has evaporated, stirring occasionally.
- discard the thyme and cool.

- Place the chopped dried figs, orange juice, water, orange zest and salt in a saucepan. Simmer over low heat until the figs are soft and only about 2 tablespoons of the liquid remains, 20 to 30 minutes. If the mixture gets dry, add water to keep it moist.
- Cool the mixture, add a little orange flavoured liqueur and purée in a blender or food processor to make a paste. Set aside.
