- Make bread soup. A bowl of flavorful broth topped with a piece of crusty bread is one of the easiest, most comforting meals in the world. To make a simple version (unlike, say French onion soup, which can be time-consuming), just heat up bone broth or chicken broth or even water, throw in some aromatics like garlic, onion, ginger, or spices, and let it simmer for a few minutes.
- Make savory French toast. When I was an exchange student in Prague, my host mother used to make this for dinner for us all the time. I think she called it "cheesy toasts," but to me it was always savory French toast.
- Put an egg in it. Some call it toad-in-the-hole, some call it egg-in-the-middle. We called it egg-in-a-hole in my house, and it was one of the first things I learned how to make myself for dinner: Just cut a round circle in the middle of a slice of bread, put that bread in a hot buttered skillet, and crack an egg in the middle.
- Or, put an egg on it. Yes, this is getting a little close to sandwich territory. But a fried egg atop a piece of toast is a perfect little dinner in a pinch.
- Put beans on it. Saucy, brothy beans piled on top of toast so that the bread gets all soggy and you have to eat it with a fork is a beautiful thing, as is a bowl of the same served with a piece of toast shoved in for mopping.
