- Preheat oven to 300 degrees F (150 degrees C). Lightly grease an 8-inch pie plate.
- Sift together the flour, cocoa powder, and salt; set aside. Stir the eggs into the sugar until smooth. Add the flour mixture, and stir just until combined. Pour in the vanilla extract and butter; stir until well combined. Pour into prepared pie plate.
- Bake on the lower rack of the preheated oven for 35 minutes, or until the center has slightly set. Allow cake to cool for 1 hour in the pie plate. Serve warm, or refrigerate overnight and serve cold.

- Mix the oats, sugar, and cocoa together in a bowl. Add the butter, and use your hands to mix the ingredients together to make a thick dough. Mix in the coffee, vanilla, and chocolate until thoroughly blended.
- Place the coconut flakes in a small bowl. Pinch off small amounts of dough and roll between your hands to make small balls, about 1-1/2 inches in diameter. Roll the balls in the coconut flakes. Balls are ready to eat, or may be refrigerated 2 hours to become firmer.

- Preheat the oven to 350°F (180°C).
- In a medium bowl, whisk the sugar and eggs until the mixture is pale yellow in color.
- Sift in the flour, cocoa powder, and salt.
- Fold until incorporated.
- Mix in the butter and vanilla.
- Grease a pan with butter and sprinkle cocoa powder to coat.
- Pour in batter and smooth out. Batter will be very thick.
- Bake for 20 minutes or until the top has hardened. The center should still be soft.
- Sprinkle with powdered sugar.
- Add berries (optional).

SWEDISH COCOA BUTTER STICKS
This comes from an old Pilsbury butter cookie book of mine that is falling apart. Thought I'd share it before I loose the pages.

Steps:
- 1. Sift together flour, baking powder, salt and cocoa.
- 2. Cream butter and gradually add sugar until mixed well.
- 3. In a separate dish beat egg slightly. Reserving 1 TBS. Add egg (except for the reserved) to the creamed butter mixture.
- 4. Blend in dry ingredients gradually. Chill 2 hours for easy handling.
- 5. Place dough on a lightly floured surface. Divide dough into four parts; mold rounded teaspoonfuls of dough into balls. Place 4" apart on ungreased baking sheet. Flatten to 1/4" thickness with fork that has been dipped in flour to prevent from sticking. Smooth dough at edges to form straight sides.
- 6. Blend together cold water with reserved egg; brush lightly over shaped cookies.
- 7. Combine blanched almonds and sugar; sprinkle over cookie.
- 8. Bake at 400 for 10-12 minutes until set, but not browned. Cool 1 minute; remove from cookie sheet.
SWEDISH BUTTER COOKIES
From 'Taste of Home Cookies' - These are a crisp butter cookie with a secret ingredient. What coffee does for chocolate, the very small amount of maple syrup does for these butter cookies - rich, buttery, mmmmm! The dough rolls into logs and I cut with a pizza cutter for quick production.

- In a mixing bowl, cream butter and sugar.
- Add maple syrup; mix well.
- Combine the flour and baking soda; gradually add to the creamed mixture.
- Divide the dough into eight portions; Roll each portion into a 9-inch log.

- Place the eggs into a saucepan with enough water to cover by 1 inch. Cover the saucepan, and bring the water to a boil over high heat. Once the water is boiling, remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water; cool the eggs under cold running water. Peel eggs, separate yolks from whites. Sieve or finely grate yolks. Reserve whites for another use.
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Beat the butter and sugar with an electric mixer in a large bowl until smooth. Beat in the egg yolks and the almond extract. Slowly mix in the flour, just until incorporated. Use a spritz style cookie maker to press cookies onto prepared baking sheet.
