SWEDISH WAFFLES WITH BERRY COMPOTE
These waffles are a weekend favorite with Gavin Kaysen's family-the recipe comes from his wife Linda's family in Sweden-and we're sure yours will love them, too. Topped with a fresh berry compote, they're a great way to start a day of lounging in your PJs.

Steps:
- Berry compote: In a small saucepan, combine berries, sugar, and lemon juice. Gently heat until sugar is dissolved. Crush about half of the berries with a wooden spoon; allow the rest to soften but maintain their shape, 10 minutes. Set aside.
- Waffles: In a bowl, whisk together the flour, baking powder, and salt. Make a well in the ingredients and pour in the milk and vanilla; whisk thoroughly. Then whisk in warm (not hot) melted butter until fully incorporated. The batter should be thin.
- Heat a waffle iron according to the manufacturer's directions. Brush waffle iron on both sides with some of the remaining melted butter. Ladle enough batter to evenly cover the lower plate. Close the lid and cook until the waffles are brown and crispy, about 3-4 minutes. Repeat in batches with remaining batter; make 6-7 waffles.
- Assembly: Place waffles on a serving platter, spoon berries on top, and serve.
SWEDISH CRISP WAFFLES (FRASVAFFLOR)
Waffles are a very popular street food and coffee shop item in Sweden. We also eat them specifically on the Feast of the Annunciation because "Vårfrudagen" (Lady Day in Swedish) sounded a lot like "våffeldagen", thus became Waffle Day! These are a lot crisper and lighter than American and Belgian waffles and contain no eggs. Serve immediately with whipped cream and fresh fruit or jam.

- Preheat a waffle iron according to manufacturer's instructions.
- Sift flour, sugar, salt, and baking powder together in a bowl. Whisk in milk, butter, and heavy cream; stir in soda.
- Cook in batches in the preheated waffle iron until waffles are golden brown and the iron stops steaming, about 5 minutes.

SWEDISH WAFFLES
Steps:
- Whisk together eggs, milk, and cardamom. Stir in sugar, flour, and baking powder until batter is well-combined. Stir in melted butter. If possible, allow batter to cool in refrigerator for 1/2 hour. Lightly grease heart-shaped waffle iron. Drop batter in heaping tablespoons on iron, spreading with a knife into every crevice. Close iron and bake. Serve with lingonberry jam. Waffles can be frozen and reheated.
SCANDINAVIAN SWEETHEART WAFFLES
Heart-shaped waffles are a traditional treat throughout Scandinavia, made crisp in Sweden and soft-textured in Norway. Topped with jam or berries and whipped cream, or wafer-thin slices of gjeitost (Norwegian brown goat cheese), they're a favorite with coffee or as a snack. This recipe is my adaptation of Norwegian-style waffles served by my friends Megan and Sverre in Trondheim, Norway.

- Place egg yolks into a large mixing bowl with the sugar, and beat until light and frothy. Mix in the vanilla sugar and water until evenly combined, and stir in half the melted butter, half the buttermilk, half the flour. When mixture is smooth, mix in remaining butter, buttermilk, flour, cardamom, and salt, and beat again to a smooth batter.
- In a separate bowl, beat the egg whites with an electric mixer until they form stiff peaks; gently fold the egg whites into the batter, incorporating as much volume as possible.
- Preheat a waffle iron according to manufacturer's directions.
- Spoon about 1/3 cup of batter into the preheated waffle iron, close the lid, and cook until the waffle is golden brown, about 5 minutes. Remove waffle to a plate. If using a heart-shaped iron, break the waffle into individual hearts to serve. Repeat with remaining batter.

SWEDISH WAFFLE COOKIES
Delicious filled cookies. The recipe calls for a liqueur called Swedish Arrack Punsch, but I usually use amaretto as it is easier to find and tastes delicious.

- Preheat oven to 350 degrees F (175 degrees C).
- In a bowl, cream together 1 cup butter and the flour until smooth and creamy. Stir in heavy cream. Scrape dough into a ball.
- Sprinkle the white sugar on a cutting board. Roll out the dough to about a 1/4-inch thickness on the sugared surface. Using a 3-inch round cookie cutter, cut dough into 24 circles. Using the rolling pin, roll each circle into a slightly oval shape. Place cookies on an ungreased cookie sheet about an inch apart.
- Bake in the preheated oven until the edges of the cookies get very lightly brown, 10 to 12 minutes. Cool slightly on cookie sheet; then transfer them to cooling racks using a spatula.
- To make the filling, mix together 1/2 cup of butter, confectioners' sugar, egg yolk, and Swedish arrack punsch in a bowl. Beat until mixture is well blended and creamy.
- To assemble, spread about a rounded teaspoon of filling on the bottom of one cookie and place another cookie, bottom side down, on the filling to form a sandwich. Repeat with the rest of the cookies.
