SWEDISH WEDDING COOKIES

Found on vegweb.com. These cookies are a vegan adaptation of a recipe by the author's grandmother. Posted for ZWT6 so that the vegans in the tour have some recipe options :) The preparation time includes the chilling time.

Swedish Wedding Cookies image

Steps:

  • Cream earth balance vegan margarine with 1/4 cup powdered sugar, add water and vanilla and mix.
  • Add flour and mix well.
  • Finally mix in pecans. (The batter will appear dry!).
  • Form into 1-inch diameter balls, place on an ungreased cookie sheet and chill for one hour.
  • Bake in a slow oven (roughly 300 degrees Fahrenheit) for 20 minutes or until lightly browned.
  • While still hot, roll in remaining confectioners' sugar.
  • Store in an airtight container.

1 cup vegan margarine, room temperature (recipe's author uses Earth Balance)
1/2 cup confectioners' sugar
1 tablespoon water
2 teaspoons vanilla extract
2 cups all-purpose flour
1 cup pecans, chopped

I LOVE DANISH WEDDING COOKIES

My Mom used to buy those wedding cookies in that pink bag, I think from Keebler, and I loved them. I came across this recipe online and tried it. It is just as good, in fact I think it's better. And they are really simple to make.

I Love Danish Wedding Cookies image

Steps:

  • Combine flour and cinnamon in a large bowl.
  • Add butter, pecans, 1/4 cup powdered sugar, and vanilla, stir well until blended. Batter will be stiff.
  • Shape dough into 1 inch balls. Place on ungreased cookie sheets.
  • Bake at 400 degrees fahrenheit for 10-12 minutes.
  • Remove cookies to wire racks to cool slightly.
  • Roll cookies in powdered sugar, and cool completely on wire rack.

1 cup all-purpose flour
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon

These are technically Mexican Wedding Cakes or Russian Teacakes, but my grandmother gave up on us calling them that years ago!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
  • Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cream butter or margarine in a bowl, gradually add confectioners' sugar and salt. Beat until light and fluffy. Add almonds and vanilla. Blend in flour gradually and mix well.
  • Shape into balls (or crescents) using about 1 teaspoon for each cookie. Place on ungreased cookie sheets, and bake for 15-20 min. Do not brown. Cool slightly, then roll in the extra confectioners' sugar.

These are also the same cookies that our dear "Meme" calls butter balls. Yield is approximate as it depends on how large you form each cookie. I have never known anyone to not like this cookie! I have always used real butter for this recipe.

Steps:

  • Blend softened butter with powdered sugar. Add vanilla.
  • Mix in salt, baking powder, flour and chopped pecans.
  • Form dough into 1 inch balls or flattened cookies and place on an ungreased cookie sheet.
  • Bake in a 325 degree oven for 12 minutes, until firm but not brown. While hot roll in powdered sugar. Let cool and roll again in powdered sugar.

  • Preheat oven to 300°. In a large bowl, cream butter and sugar until light and fluffy. Add syrup.
