A sweet mustard-based BBQ sauce with a bit of a bite, excellent on chicken and pork. Also makes a great dipping sauce for chicken fingers! Baste on meat while grilling or serve on the side. Will store covered in refrigerator for 2 to 3 weeks.

MISSISSIPPI SWEET AND SOUR BARBEQUE SAUCE
A sweet and sour version of barbeque sauce for shrimp, pork, and chicken. This sauce is very potent, so use sparingly as a baste while cooking shrimp, pork, and chicken. To make into a dipping barbeque sauce increase the amount of brown sugar to 1 cup and use white vinegar instead of apple cider vinegar.

SWEET-AND-SOUR MUSTARD
In addition to using my mustard as gifts for friends, I give it to my father each Christmas. One year, I absentmindedly left it behind in my refrigerator-and he was so disappointed when he didn't find it under the tree that I had to send him some as soon as I got back home! Of course, I like using this mustard in my own kitchen as well-in everything from honey-mustard chicken to sandwiches. It doesn't have a "bite"...just a little "zip". Our home's in the country, I grow both vegetables and flowers here. On vacations, my husband and I get our exercise doing lots of mountain hiking.

- In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute. Stir in the chili powder, cayenne and pepper; cook 1 minute longer. , Stir in the ketchup, molasses, vinegar, Worcestershire sauce, mustard and pepper sauce. Bring to a boil. - Heat the oil in a small saucepan over high heat. Add the garlic and ginger and cook over high heat until fragrant, about 2 minutes. Whisk in the sherry, hoisin sauce, ketchup, chile-garlic sauce, soy sauce, and sesame oil and bring to a boil. Remove from heat and let cool.
SWEET AND SOUR BARBECUE SAUCE
This sauce will keep well refrigerated for up to 1 month and freezes wonderful for up a 1 year! Use this for any recipe you like that requires sweet and sour BBQ sauce, it's wonderful on spareribs! If you like a more thicker sauce then mix 1 cup cold water with 1/4 cup cornstarch and stir into the simmering sauce at the end of cooking time. This sauce should be prepared a day ahead and refrigerated to blend flavors. If you like some heat add in cayenne pepper if desired. You will love this BBQ sauce!

- In a Dutch oven heat oil over medium heat.
- Add in onion (fresh garlic and green pepper if using) saute until the onion is tender.
- Reduce the heat to low and add in the tomato paste; cook stirring for 2 minutes.
- Add in tomato sauce with all remaining ingredients; bring to a simmer cook stirring for about 5 minutes.
- Reduce heat to low; cover and simmer for about 2-1/2 hours (uncover the last hour of cooking) stirring occasionally until sauce thickens and reduces.
- Season with salt if desired.

- Add garlic. Stir and cook 1 minute.
- Add tomatoes, pineapple, vinegar, molasses, brown sugar, tomato paste, mustard, paprika, oregano, chipotle powder and pepper. Bring to a boil. Lower heat and simmer, stirring occasionally, for 2 hours, or until thick. Let cool slightly.
