SWISS CHARD WITH ONIONS & GARLIC
I like to make this sauteed Swiss chard a main dish by serving it with pasta, but it's also a tasty side dish all on its own. My boys love it and ask for it often. -Rebekah Chappel, Portales, New Mexico

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in the garlic, and cook for 1 minute to soften. Add the Swiss chard. Cook and stir until the stems of the chard are tender. You can use some of the hot pasta water to help steam the chard in the covered pan.
- Stir the hot spaghetti into the chard mixture along with the capers. Season to taste with salt and black pepper, and drizzle with lemon juice if desired. Sprinkle with Parmesan cheese to serve.

STIR-FRIED SWISS CHARD AND RED PEPPERS
This is particularly beautiful if you can find rainbow chard, those multicolored bunches with red, white and yellow stems. Slice the chard crosswise in thin strips. If the pieces are too thick, they'll be tough.

Steps:
- In a small bowl or measuring cup, combine the soy sauce, rice wine or sherry, and the sesame oil. Combine the salt, pepper and sugar in another small bowl. Have all the ingredients within arm's length of your pan.
- Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two in the pan. Swirl in the oil by adding it to the sides of the pan and tilting it back and forth. Add the garlic and ginger, and stir-fry for no more than 10 seconds. Add the chard, and stir-fry for two minutes, until the leaves wilt. Add the red pepper and spring onion or red onion. Turn the heat to high, and stir-fry for one minute, or until the pepper begins to soften. Add the salt, pepper and sugar. Toss together, and add the soy sauce mixture. Stir-fry for two to three minutes until the chard leaves are tender and the stems and red peppers are crisp-tender. Stir in the cilantro, and serve over cooked quinoa, rice or rice noodles.

GARLICKY SWISS CHARD
There's really no secret to making excellent sautéed greens: just good olive oil, salt, loads of garlic and a jolt of red pepper flakes. This method works with pretty much any green too - broccoli, broccoli rabe, kale, spinach, collards, brussels sprouts or green beans - so you've really no excuse not to get your daily dose of vegetables. Serve it as a side to any roasted or grilled meat, or over a mound of creamy polenta that's been crowned with a fried egg.

- Cheesy Stove-Top Barley and Chard. In this one-pot vegetarian dinner, chard brightens a cheesy take on risotto with barley standing in for the usual arborio rice.
- Rolled Stuffed Salmon. It's hard to decide which ingredient steals the show here: the creamy Dijon and Swiss-Chard filling or the omega-packed salmon. This main course looks fancy, but it's quite easy to put together and makes a wonderful centerpiece at a holiday meal or other special occasion.
- Late-Summer-Vegetable Minestrone. Homemade minestrone doesn't need to lean on store-bought broth. In this recipe, the flavorful broth builds from the bouquet of vegetables in the soup.
- Skillet Pizza with Eggplant and Greens. It's time for a pizza topping upgrade. While we don't often see Swiss chard on the menu at our local pizza joint, we think it deserves a spot.
- Creamy Swiss Chard with Coconut. The earthy notes of Swiss chard pair well with creamy ingredients—and that doesn't just mean butter and cheese. In this dairy-free dish, wilted greens are coated in creamy coconut milk with a hint of spice from garlic, ginger, and hot chile peppers.
