MAPLE SWEET DUMPLING SQUASH
An easy way to prepare squash. Even folks who hate squash will love this one. Serve it as a side dish, or even as a dessert. This recipe can be prepared with butternut or acorn squash (or any other winter squash), but will require longer cooking times. Kosher: Dairy.

Steps:
- Preheat oven to 350 degrees.
- Cut the squash in half and remove seeds with a spoon.
- Use a fork to poke several holes in the outside skin of each half of the squash. Place squash in baking pan with hollow side up. Add 1" of water to bottom of pan.
- Place 1 tablespoon of butter, 1/8 teaspoon of nutmeg and 1/2 teaspoon of cinnamon in the hollow of each squash half. Pour 1/4 cup of maple syrup on each.
- Bake uncovered on middle rack for 30-45 minutes or until the flesh is soft.
- Serve hot. If using sweet dumpling squash, each half will serve one person and can be served with dinner "as is." Alternately, you may allow the squash halves to cool partially, remove the skins, and mash or puree the squash.

CHEF JOHN'S BUTTERNUT BISQUE
For a winter special occasion or just a weekday meal, this butternut bisque makes a perfect, warming starter course. The snipped chives and pomegranate garnishes add a festive touch, but you can also use crumbled bacon and a swirl of crème fraiche.

Steps:
- Melt butter in a pot over medium-low heat. Add onions and a large pinch of salt. Cook and stir until onions have softened but not taken on any color, about 10 or 15 minutes.
- Cut off ends of squash. Carefully cut squash in half lengthwise and remove the seeds. Peel the squash with a vegetable peeler. Cut into chunks.
- Raise heat under pot to medium-high. Stir in tomato paste; cook and stir until mixture begins to caramelize and turn brown, about 2 minutes. Add squash, chicken broth, 1 teaspoon salt, and cayenne pepper. Bring to a simmer; reduce heat to medium-low and simmer until squash is very tender, 15 to 25 minutes. Reduce heat to low. Blend with an immersion blender until very smooth. Stir in cream and maple syrup; add more salt if needed.
- Ladle into serving bowls. Garnish with a swirl of cream, and a sprinkle of chives and pomegranate seeds.

ROASTED BUTTERNUT SQUASH AND SWEET POTATO BISQUE WITH SMOKED APPLEWOOD BACON
I tried out for the show 'Master Chef' this past October in New York City. One of my fellow contestants made a pumpkin soup with applewood bacon. He made it to the next round, but sadly I did not. This is my rendition of his soup. I made it my own by using butternut squash and sweet potato and made it richer by turning this into a bisque. I hope you enjoy it as much as I did. Please share your comments. For less-fat option substitute half-and-half with milk or nonfat half-and-half.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Combine squash, sweet potatoes, olive oil, salt, and pepper together in a bowl; toss to coat. Pour out onto a baking sheet.
- Bake in the preheated oven, flipping the vegetables once, until slightly caramelized and tender, about 60 minutes.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until slightly crisp, 7 to 10 minutes. Reserve 1 tablespoon bacon drippings. Drain the bacon slices on paper towels; crumble bacon.
- Heat bacon drippings and butter together in Dutch oven over medium heat. Saute onion and butter in hot butter mixture until onion is translucent, 7 to 10 minutes.
- Pour the white wine into the pan and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Cook until white wine is reduced by half, 3 to 5 minutes.
- Stir roasted squash mixture into onion mixture; add stock and bring to a boil. Reduce heat to low and simmer until all vegetables are tender, about 10 minutes.
- Pour vegetable mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return pureed soup to Dutch oven.
- Stir half-and-half into pureed soup; cook and stir over medium-low heat until soup is warmed through, about 5 minutes. Stir nutmeg into soup; season with salt and pepper to taste. Ladle into bowls and top each with crumbled bacon.

- Heat the oil and melt the butter in a large pot over medium heat. Cook and stir the onion in the butter and oil under tender.
- Mix the carrots and squash into the pot. Pour in vegetable stock, and season with salt, pepper, and nutmeg. Bring to a boil, reduce heat, and simmer until vegetables are tender.
- In a blender or food processor, puree the soup mixture until smooth. Return to the pot, and stir in the heavy cream. Heat through, but do not boil. Serve warm with a dash of nutmeg.

SWEET DUMPLING SQUASH BISQUE
I find that I LOVE a Bisque! This one is really easy and delicious, other than peeling the squash,which I have my son do! (I 'll bet you could roast it first and then scrape it out. I will try that next time!) If you don't love roasted garlic, you won't want to put this much in there. But if you've never had roasted garlic, it has a totally different taste, sweet and nutty. Roast the garlic and try it! You can use the rest in other recipes if you don't want it all in your bisque. Me, I could eat a whole bulb of the stuff by myself! (With bread) If you don't have one of those handy, dandy immersion blenders, and you too love bisque, you must get one! I love mine!

- Drizzle onion, garlic, and squash with olive oil. Cover garlic liberally and make sure that when you sliced the top off all the cloves were partially exposed. Bake at 350 for 1 hour. Turn off and leave for 4 hours with the door shut. Alternatively, continue to bake until onion carmelizes and reduces.(I had to leave and go to church.It wasn't quite carmelized as much as I wanted when I left, but it was close. I'll bet it would have been done in another 20 minutes).
- Put in onion and squash in the pot with 2 cups reconstituted chicken base. Squeeze the garlic in( it comes right out of the peeling).
- Bring to a boil. Turn off. Add hot pepper. Puree with immersion blender.
- Sprinkle top liberally with Tony's. (I did this a couple of times.).
- Add corn, bring to a boil over medium heat.
- Add Tony's to taste.or salt to taste if it is spicy enough but you want more salt.
- Enjoy!

- Preheat oven to 375 degrees F. Halve squashes and scoop out seeds. Place squashes on one rimmed baking pan, and garlic and onion on another rimmed baking pan. Drizzle everything with olive oil and sprinkle with salt and pepper.
- Transfer both pans to oven. Roast garlic and onion 30 minutes or until onion is golden brown. Remove garlic and onion from oven; remove garlic from skins and discard skins.
- Scoop squash flesh and transfer to blender. Add sage, broth, water, cumin, paprika, turmeric and roasted onion and garlic. Blend until smooth.
