SWEET 'N SIMPLE LOAF (DEAF SMITH COOKBOOK)

Another good recipe from the Deaf Smith Cookbook. Simple, quick, and tastes really good. Enjoy! (PS: I normally use 2 eggs.)

Sweet 'n Simple Loaf (Deaf Smith Cookbook) image

Steps:

  • Beat egg/s, milk, butter and syrup together.
  • Sift flour, baking powder and salt and stir into the liquids. Fold in fruit/nuts.
  • Pour into oiled 9" x 5" loaf pan and bake at 350 F for 50-60 minutes. Cool on rack.

1 -2 egg
1 cup milk
1 tablespoon melted butter or 1 tablespoon oil
1/2 cup maple syrup, honey or 1/2 cup unsulphured molasses
3 cups whole wheat flour (or a mixture of whole wheat flour and rye, or whole wheat pastry flour)
2 teaspoons baking powder
1 teaspoon salt
12 raisins (or any chopped dried fruits, or nuts, or seeds)

Steps:

  • In a saucepan, combine the first seven ingredients; bring to a boil. Cook and stir for 2 minutes or until thickened; set aside. , In a large bowl, combine the first six meat loaf ingredients; add 2/3 cup of the reserved sauce. Crumble beef and pork over mixture and mix well. , Pat into two greased 8x4-in. loaf pans. Pour the remaining sauce over loaves. Bake, uncovered, at 350° for 50 minutes or until no pink remains and a thermometer reads 160°.

1/2 cup chopped onion
2 teaspoons salt

2 pounds lean ground beef (90% lean)

Oatmeal-Honey Loaf (Deaf Smith Cookbook) image

Steps:

  • In large bowl combine oats and boiling water; stir until mixed. Let sit 2 hours; add butter and honey.
  • Sift together flour, baking powder and salt; add milk powder.
  • Beat egg and water. Add flour mixture; add this mixture to the oatmeal and mix well (do NOT overmix).
  • Turn into an oiled 9" x 5" loaf pan and bake at 350 F for 60-70 minutes, until crust is golden. Turn onto rack to cool.
