SWEET ROLLS WITH CHERRY

Cherry and sweet rolls just go together. This is a great recipe from JoCooks which uses cherry pie filling (see my recipe for homemade cherry pie filling) Make yourself a nice pot of coffee and get ready to Enjoy!

Sweet Rolls with Cherry image

Steps:

  • 1. In a large bowl, dissolve the yeast into the warm milk. Let temper for 5 minutes. In a separate (mixer)bowl,while yeast is tempering, cream sugar and butter. Add salt, eggs, and gradually add flour to mix well.
  • 2. Pour the milk/yeast mixture into the flour mixture and using the dough hook, mix til well incorporated. Place dough into an oiled bowl, cover and let rise in a warm place about 1 hour or until the dough has doubled in size.
  • 3. Punch the dough down and then roll it out on a lightly floured surface, until it is approx 16 inches long by 12 inches wide and approx 1/4" thick.
  • 4. Preheat oven to 350 degrees while you spread the cherry pie filling evenly over the entire surface of the dough. Working carefully starting at the outside long edge, roll the dough towards the opposite long side, jelly roll style. Cut the roll into 1 3/4 inch slices, and place in a lightly greased baking pan, filling side up. Bake for 20-25 minutes or until light golden brown. If you would like to drizzle with a confectioners sugar glaze, wait til the rolls have slightly cooled and then do so. Enjoy!

1 pkg yeast
1 c warmed milk
1/2 c turbinado sugar (you may also use granulated)
1/3 c butter (you can also use margarine equally well)
1 tsp salt
2 eggs
4 c flour
1 can(s) (1lb, 5oz) cherry pie filling ..or 1 recipe homemade filling

Basic Sweet-Roll Dough image

Steps:

  • Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
  • Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
  • Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
  • Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

Christmas Morning Sweet Rolls image

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine sugar, salt, 1 cup flour, oil, egg and the yeast mixture; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky). , Do not knead. Place in a greased bowl, turning once to grease the top. Cover and refrigerate overnight., For filling, in a small bowl, mix sugar, cinnamon and nutmeg. Punch down dough; turn onto a lightly floured surface. Roll into a 18x8-in. rectangle. Spread with butter to within 1/2 in. of edges; sprinkle with sugar mixture. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices., Place in a greased 13x9-in. baking pan, cut side down. Cover with a kitchen towel; let rise in a warm place until doubled, about 45 minutes., Preheat oven to 350°. Bake until golden brown, 20-25 minutes. Place on a wire rack to cool slightly. Beat confectioners' sugar, butter, cinnamon, vanilla and enough eggnog to reach desired consistency; spread over warm rolls.

Overnight Cherry Danish image

Steps:

  • In a small bowl, dissolve yeast in warm milk. In a large bowl, combine flour, sugar and salt. Cut in butter until crumbly. Add yeast mixture, cream and egg yolks; stir until mixture forms a soft dough (dough will be sticky). Refrigerate, covered, overnight., Punch down dough. Turn onto a lightly floured surface; divide into 4 portions. Roll each portion into an 18x4-in. rectangle; cut into 4x1-in. strips. , Place 2 strips side by side; twist together. Shape into a ring and pinch ends together. Place 2 in. apart on greased baking sheets. Repeat with remaining strips. Cover with kitchen towels; let rise in a warm place until doubled, about 45 minutes., Preheat oven to 350°. Using the end of a wooden spoon handle, make a 1/2-in.-deep indentation in the center of each Danish. Fill each with about 1 tablespoon pie filling. Bake 14-16 minutes or until lightly browned. Remove from pans to wire racks to cool., For icing, in a bowl, beat confectioners' sugar, butter, vanilla, salt and enough cream to reach desired consistency. Drizzle over Danish.
