SPAM FRIED RICE
Spam fried rice is a popular dish in Hawaii. This version is quick and easy and a great way to use up leftover rice and pantry staples.

Steps:
- Heat the butter and oil in a large skillet over medium heat. When the butter has melted and the oil is hot, add the Spam and bell peppers. Cook until the Spam becomes crispy, about 5 minutes.
- Add the whites of the scallions, garlic, ginger and rice. Stir together and cook until the rice begins to crisp and brown, 3 to 4 minutes. Add the pineapple, peas, soy, honey and lime juice. Stir together and continue to cook until everything comes together, another minute. Add to a platter and sprinkle over the sesame seeds and reserved scallion greens.
- For the spicy BBQ aioli: Quickly mix together the mayonnaise, BBQ sauce, sesame oil and Asian chile sauce. Drizzle over the fried rice before digging in.

Steps:
- Take spam out of the can and place it in a small baking dish.
- Insert the cloves into the spam loaf.
- Spread the top and sides of the spam loaf with the apricot pineapple preserves. You could also use orange marmalade or 1/2 cup brown sugar mixed with 1/2 cup canned crushed pineapple packed in pineapple juice and stud the spam loaf with whole cloves.
- Bake at 350 degrees for 30 minutes.
- Slice and serve hot. Depending on your sides, you can get 4-6 servings from one can.

- Spray wok or large pan with Pam-type spray.
- Add cut up Spam and saute until browned, remove and set aside.
- Cut up pineapple and set aside.
- Spray again and saute veggies until mushrooms have released their liquid.
- Mix rest of ingredients into the cold water, add to pan.
- Stir until mixture has thickened, add pineapple and Spam, heat until warmed through.
- Serve over rice.
