SLOW COOKER PULLED PORK WITH ROOT BEER
Easy slow cooker pork shoulder is excellent for making delicious pulled pork sandwiches or serving as an entree. Serve over rice or with Hawaiian sweet bread for a yummy little sandwich. I like to top the pulled pork with sliced roasted red peppers, blue cheese, and chimichurri sauce to make a delicious sandwich with Argentinean flavor.

Steps:
- Pat pork shoulder dry and place in a slow cooker. Pour root beer over pork.
- Mix together brown sugar, cumin, paprika, salt, pepper, garlic powder, onion powder, and oregano in a small bowl until thoroughly combined. Sprinkle on top of pork and rub lightly until entire surface of pork is coated.
- Cook on Low for 5 hours. Switch to High and cook until meat is tender and can easily be pulled apart with a fork, about 3 hours more. Carefully remove pork and shred with 2 forks. Drizzle some liquid from the slow cooker over pork to moisten.

- Place pork roast in a slow cooker, rub with salt, and pour root beer, liquid smoke, and garlic over the top.

- Place roast in a 3-qt. slow cooker. Add the onion, garlic and 1 cup root beer. Cover and cook on low for 9-10 hours or until meat is tender. , In a small saucepan, combine the chili sauce, hot pepper sauce and remaining root beer. Bring to a boil. Reduce heat; simmer, uncovered, for 20-25 minutes or until thickened. , Remove meat from slow cooker; cool slightly. Discard cooking juices. Shred pork with 2 forks and return to slow cooker. - Arrange sweet onions in the bottom of a slow cooker.
- Mix salt, brown sugar, paprika, black pepper, garlic powder, and red pepper flakes together in a bowl until seasonings are well mixed; rub all over pork roast. Place roast in the slow cooker, fat-side up. Brush any leftover seasonings mixture from the work surface into the slow cooker.

- Pour 1 can of root beer in the bottom of your slow cooker. Place the pork in your slow cooker in root beer (if the meat is too big for your slow cooker you can cut it into pieces). Cook on low about 8-10 hours or until pork is very tender. Discard liquid from slow cooker and pull pork apart with 2 forks until shredded.
- While pork is cooking, prepare BBQ sauce. Place tomatoes, tomato paste, and onion in blender (or food processor) and process until smooth. Pour into large saucepan over medium-high heat. Add vinegar, 2 cans root beer, brown sugar, molasses, liquid smoke, salt, garlic powder, black pepper, and chipotle to pan and whisk to combine.
- Bring sauce to a boil, reduce heat to simmer, and cook about 1 hour or until thickened and reduced, stirring occasionally. Refrigerate sauce for a few hours or until ready to serve.
- To serve, combine desired amount of BBQ sauce with pork and serve. Serve with rolls and coleslaw if desired.
