SWEETHEART STEAKS

Comes from Taste of Home Feb/March 2005 Issue. Made these for the super bowl. I marinated the steaks in the sauce and grilled them. They had a very good flavor.

Sweetheart Steaks image

Steps:

  • In a small saucepan, combine the first 15 ingredients. Bring to a boil.
  • Reduce heat; simmer, uncovered, for 30 minutes, stirring occasionally. Set aside 1/4 cup sauce for serving and keep warm.
  • Place steaks on a broiler pan; top with some of the remaining sauce. Broil 4 to 6 inches from the heat for 10 to 16 minutes on each side or until meat reaches desired doneness, basting occasionally with remaining sauce.
  • Serve with reserved sauce.

3 tablespoons Catalina dressing
3 tablespoons honey
3 tablespoons apricot preserves
3 tablespoons grape jelly
2 tablespoons minced chives
2 tablespoons balsamic vinegar
2 tablespoons olive oil
2 tablespoons ketchup
1 tablespoon soy sauce
3 garlic cloves, minced
1 teaspoon ground mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
2 beef tenderloin steaks (1-1/2 to 2 inches thick)

Steps:

  • Rub four 8-ounce filets mignons with Pepper-Ancho Rub on one side; drizzle with vegetable oil. Grill rub-side down over high heat, about 4 minutes; flip, reduce the heat to medium or move the steaks to a cooler spot and grill 4 more minutes (for medium-rare), brushing often with Mint Glaze (recipe below). Top with more glaze.
  • Whisk all of the ingredients in a bowl.
  • Whisk the mustard, honey, horseradish and mint in a bowl; season with salt and pepper. Set aside a few tablespoons for the finished steaks.

2 tablespoons coarsely ground pepper
1 tablespoon ancho chile powder
1 tablespoon kosher salt
6 tablespoons dijon mustard
1/4 cup honey
2 tablespoons horseradish, drained
6 fresh mint leaves, finely chopped
Kosher salt and freshly ground pepper

Steps:

  • 1. Pat steak dry and coat with pepper and salt. Set aside.
  • 2. In medium skillet, over med-high heat, melt 1 tsp butter. Add mushrooms and 1 Tbsp water. Cover and cook about 5 minutes, stirring occasionally, until mushrooms are soft. Uncover and cook 3-4 minutes longer until mushrooms are tender and golden. Transfer to a bowl.
  • 3. Melt 3 tsp butter in the skillet over med-high heat. Add steak and brown on all sides until done to your liking. Remove and cover to keep warm. While steak is resting, make red wine sauce in the same skillet.
  • 4. Add shallot to the skillet and cook, stirring, about a minute, or until it starts to brown. Add wine and stir, scraping up any brown bits from bottom of the pan. Cook until reduced by half. Stir in broth and bring to a simmer. Continue cooking until wine is again reduced by half, about 3 minutes longer. Remove from heat and whisk in remaining 2 tsp. butter, just until it melts.
  • 5. Slice steak thinly and divide among two serving plates. Toss mushrooms with red wine sauce and spoon over steak. Serve with red wine and a nice salad or green veggie.

1/2 tsp fresh ground black pepper

8 oz cremini (or white) mushrooms, sliced
1 large shallot, thinly sliced
1/2 c dry red wine
1/3 c beef broth

Steps:

  • In a small bowl, mix together sugar, salt, pepper, cayenne, black pepper and garlic powder.
  • Rub all sides of the steaks with this mixture. Cover and allow to rest for 1 hour.
  • After 1 hour, preheat the grill to high or preheat the broiler.
  • Grill or broil over high heat for about 3-4 minutes on each side (depending on the thickness of your steaks) or until desired doneness is reached.

1 teaspoon cayenne pepper
1 teaspoon ground black pepper
1/2 teaspoon garlic powder
2 lbs top sirloin steaks (or ribeyes, NY strip)

SWEET AND SPICY GRILLED FLANK STEAK

There are some steaks that need nothing more than a little salt and pepper to bring out their beefy goodness. Flank steak is not one of them. This bold marinade is just the sort of seasoning the brawny cut begs for: lime juice and zest add brightness, brown sugar sweetness, and jalapeño and sriracha a complex heat. Just whiz it all together in a food processor and slather it on the meat. Marinate overnight (or 20 minutes if that's all the time you have) before tossing it on the grill. Lastly, always make more flank steak that you think you want. Leftovers are the best part.

Sweet and Spicy Grilled Flank Steak image

Steps:

  • In a food processor, pulse together scallion, ginger, jalapeño, garlic, sugar, lime zest and juice, and sriracha. With the motor running, pour in oil until smooth.
  • Season steak with salt. Place in a large bowl and pour marinade over meat. Turn to coat well with the mixture. Cover tightly and refrigerate for at least 2 hours or overnight.
  • When you are ready to cook the steak, heat the grill to medium-high heat, or heat the broiler with the rack set 4 inches from the heat source. Transfer meat to the grill and cook, covered, until it reaches the desired doneness (about 5 minutes per side for medium-rare), or broil until charred and done to taste, 4 to 6 minutes per side. Let rest on a cutting board for 5 minutes, then slice thinly.

Steps:

  • Heat sesame oil in a large skillet over medium-high heat; cook and stir steak in hot oil until browned, about 5 minutes. Transfer meat to a plate and return skillet to stovetop. Cook and stir broccoli, snap peas, carrots, and bell pepper in the same skillet used to cook beef until vegetables start to become tender, 5 to 7 minutes. Transfer vegetables to the plate with the meat; return skillet to stovetop.
  • Stir wine, honey, dark soy sauce, and red pepper flakes into skillet, scraping up any browned bits from the bottom of the skillet. Stir beef and vegetables into wine mixture; simmer and stir until wine sauce is reduced, about 10 minutes.
