Seafood Chili image

Steps:

  • Heat the oil in a large heavy saucepan over medium high heat. When hot, add the onion, garlic, bell peppers, tomatillos, oregano, chili powder, cumin, and chipotle pepper. Lower the heat to medium low and saute, stirring often, until the onions and peppers are soft and limp, about 10 minutes. Add the wine, turn up to medium high, and stir until most of it evaporates, about 2 minutes. Add the bay leaf and tomatoes, turn the heat down to medium and simmer gently, covered, until the sauce thickens, about 20 minutes. Stir in the beans, and add the clams, shrimp, and scallops and cook just until the shrimp are bright pink and the scallops are white, and no longer glossy, about 5 minutes.

1 tablespoons vegetable oil
2 large onions, chopped
3 garlic cloves, crushed and minced
1 red bell pepper, cored, seeded, and sliced
1 green bell pepper, cored, seeded, and sliced
2 tomatillos, papery skin removed, minced (optional)
1/4 cup minced fresh cilantro
2 tablespoon minced fresh oregano, or 1 tablespoon crumbled dried
1 tablespoon chili powder
2 teaspoons ground cumin
2 teaspoons chipolte pepper flakes, or to taste (optional)
1/4 cup red wine or white wine
1 bay leaf
2 cups chopped peeled tomatoes, fresh or canned
1 to 2 cups kidney beans and/or black beans
Salt
1/3 pound minced clams, drained
1/2 pound shrimp, shells removed
1/2 pound sea scallops, rinsed, patted dry, and cut into halves or quarters, depending on size

Steps:

  • In a large pot, heat oil over medium-high heat. Add beef and brown. Add onion, garlic, and chicken broth and simmer for 1 hour. Add green chili peppers, beef broth, both tomato sauces, and hot sauce; simmer for 1 more hour. Add cumin, California chili powder, 2 1/4 tablespoons New Mexico chili powder, and salt; simmer for 45 more minutes. Add arbol chili powder, remaining 1/2 teaspoon New Mexico chili powder, adobo seasoning blend, brown sugar, and jalapeno powder. Simmer for 15 more minutes and then serve.

44 ounces beef, cut into 1/4-inch cubes
3/4 cup finely chopped onion
5 medium cloves garlic, smashed
1 (14.5-ounce) can chicken broth
2 medium canned whole green chile peppers, seeded and finely chopped (recommended: Ortega)

1/2 cup Mexican hot-style tomato sauce (recommended: El Pato brand)
1/2 cup tomato sauce (recommended: Hunt's)
1 teaspoon hot pepper sauce
1 1/4 tablespoons ground cumin

2 1/4 tablespoons New Mexico chili powder, plus 1/2 teaspoon
1 teaspoon salt
1/2 teaspoon arbol chili powder
1/4 teaspoon adobo seasoning blend (recommended: Accent)
Pinch brown sugar
Pinch jalapeno powder

HARRY'S CHILI

Harry's Chili image

Steps:

  • In a large pot or cast-iron kettle, over medium-high heat, saute the first eight ingredients and all of the spices and a sprinkling of salt until the onions, garlic, and peppers are soft and the meat is just browned.
  • Add the tomatoes, wine, beer, molasses, and honey. Bring to a boil, then reduce heat and simmer uncovered for 1 1/2 to 2 hours, or until total liquid volume has decreased by about 20%, stirring frequently (IMPORTANT TO STIR FREQUENTLY!).
  • Add the cilantro, flour, and some more salt and some freshly ground black pepper, stirring to thicken and distribute evenly. Simmer for another 20 minutes.
  • Ladle into bowls, top with the prescribed topping, and serve with plenty of tortilla chips.

1/4 C extra virgin olive oil
1/4 C good balsamic vinegar
3 different onions (red, yellow, sweet, etc.), roughly chopped
3 different bell peppers (green, red, yellow), roughly chopped
4 different chilis (green, jalapeno, etc.), seeds left in or removed, depending on taste, and finely chopped
1 head of garlic, peeled and smashed
1 1/2 lbs cubed, lean beef
1 1/2 lbs ground, lean pork
1/2 to 2 tablespoons (same for each, but amount depends on tolerance for spice):
- chili powder
- cayenne pepper
- paprika
- ground cumin (x2)
- white pepper
- black pepper
- cinnamon
Salt
1 bottle tasty red wine
1 dark beer
15-20 mixed, large, ripe tomatoes (beef, roma, vine, etc.), roughly chopped
1/2 C dark molasses
1/4 C honey
1/2 C maize or corn flour
Heaping handful of chopped cilantro
Corn tortilla chips
- small handful of shredded extra sharp cheddar cheese
- heaping Tbsp of diced, ripe avocado
- dollop of sour cream
- sprinkle of chopped scallion
- pinch of finely chopped cilantro

SWICK AND SWICK WORLD CHAMPIONSHIP CHILI

This is not fast food nor is it diet food. This is George and Maud Swick's recipe; it's the 2001 World Champion, International Chili Society. I use this as a baseline and substitute liberally. She uses oil I try to use bacon fat or whatever is around the house. I usually add some beer, I mix and match different chili powders, and sometimes I feel like making it hotter; sometimes I make it less hot.

  • Brown beef in oil. Add onion, broth and garlic. Simmer one hour.
  • After one hour add second ingredient group. Simmer one more hour.
  • After two total hours of cooking add the third ingredient group (spices).

Steps:

  • Combine the ground beef, chili powder, garlic, hot sauce, seasoning salt, beef base, cumin, pepper, onion and 1 cup water in a heavy-bottomed 4-quart stockpot and mix well. Cook the chili over medium-high heat until the ground beef is cooked, about 30 minutes. Whisk in the tomato paste, making sure to blend it into the chili well. Simmer until thickened and the tomato flavor is incorporated, about 5 minutes. Turn off the heat and serve over burgers!
