BACON SWISS QUICHE

Light and fluffy, this scrumptious quiche is ideal for breakfast or brunch but can also be served at dinnertime. Serve with chilled grapes or other fresh fruit on the side. -Colleen Belbey, Warwick, Rhode Island

Bacon Swiss Quiche image

Steps:

  • Preheat oven to 350°. Line a 9-in. pie plate with crust; trim and flute edges. Set aside. In a small skillet, saute green onions in butter until tender. , In a large bowl, whisk eggs, cream and juice. Stir in bacon, salt, pepper and green onions. Pour into crust; sprinkle with cheese., Bake until a knife inserted in the center comes out clean, 40-45 minutes. Let stand 10 minutes before cutting. Freeze option: Securely wrap individual portions of cooled quiche in parchment and foil; freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Unwrap quiche; reheat in oven until heated through and a thermometer inserted in center reads 165°.

Canadian Bacon Quiche image

Steps:

  • Preheat oven to 400°F. Prepare pie crust as directed on pkg. for unfilled 1-crust pie, using 9-inch pie plate sprayed with cooking spray. Arrange Swiss cheese pieces evenly on bottom of pie crust; top with the Canadian bacon.
  • Beat eggs and milk with wire whisk until well blended; pour into crust. Sprinkle with onions and shredded cheese; top with tomato slices.
  • Bake 15 min. Reduce heat to 350°F; continue baking 25 to 30 min. or until center is set and top is lightly browned. Let stand 10 min. before cutting into 6 wedges to serve.

Steps:

  • Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450° for 5 minutes. Remove foil. Bake 5 minutes longer. Cool completely. , Sprinkle bacon over the crust. Top with tomato and cheese. In a large bowl, beat the egg yolks, sour cream, flour and salt until smooth. In another large bowl, beat egg whites until stiff. Fold into sour cream mixture; spread over cheese. Sprinkle with paprika. , Bake at 350° until a knife inserted in the center comes out clean, about 45 minutes. Let stand 5-10 minutes before cutting.

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease a 10-inch glass pie plate.
  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Pat dry on paper towels and crumble the bacon. Sprinkle bacon, cheese, and onion in the pie plate.
  • In a medium bowl, stir the milk, eggs, baking mix, and pepper with fork until blended. Pour into pie plate.
  • Bake 35 to 40 minutes or until knife inserted in center comes out clean.

Steps:

  • Chill Crust 30 minutes.
  • Heat oven to 425 degrees Fahrenheit.
  • Fry bacon in skillet until crisp.
  • Crumble all but 6 slices of bacon.
  • Beat eggs with cream, salt, nutmeg, sugar, salt and pepper.
  • Rub chilled crust with butter.
  • Sprinkle bacon and cheese into pie shell.
  • Pour egg mixture over bacon and cheese.
  • Bake for 15 minutes.
  • Reduce heat to 300 degrees Fahrenheit and bake for 40 minutes more.
  • Garnish with rest of bacon.
