PICKLED GREEN BEANS

I use these in Bloody Marys, instead of celery sticks, and they are always a hit!

Pickled Green Beans image

Steps:

  • Cut green beans to fit inside pint canning jars.
  • Place green beans in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, for 3 minutes. Plunge beans into ice water. Drain well.
  • Pack the beans into four hot, sterilized pint jars. Place 1 clove garlic and 2 sprigs dill weed in each jar, against the glass. Add 1 teaspoon of salt to each jar.
  • In a large saucepan over high heat, bring vinegar and water to a boil. Pour over beans.
  • Fit the jars with lids and rings and process for 10 minutes in a boiling water bath.

Steps:

  • Saute the garlic and the ginger in the oil for five minutes.
  • Add the peppers and spices and saut a few seconds more.
  • Add the tomato [mango or peach] and the water and reduce heat to a simmer.
  • Cook until the achar is the consistency of catsup.

Green bean & mustard pickle image

Steps:

  • Put the onions in a preserving pan with 500ml of the vinegar. Cover and cook gently for 20 mins until soft. Meanwhile, blanch the beans for 5 mins, then drain.
  • Mix the flour, mustard powder, turmeric and celery salt. Heat the mustard seeds in a small lidded pan until you hear them popping, then tip them into the flour mixture. Gradually stir in remaining vinegar until smooth.
  • When the onions are ready, tip in the spice vinegar mixture and stir continuously over the heat until thickened. Add the blanched beans and cook, uncovered, for 10 mins, stirring occasionally. Add both the sugars and cook, stirring frequently, for 15 mins more until thick. Spoon into sterilised jars (see tip) and seal while hot. This will keep in a cool place for a year, but the colour will fade over time. Once opened, store in the fridge.

Spicy Pickled Green Beans image

Steps:

  • Submerge 3 pint jars on a rack in a large pot of water. Cover and bring to a rolling boil, then reduce heat to low to keep jars warm until ready to fill.
  • Combine vinegar, water, and pickling salt in a saucepan and bring to a boil.
  • Working with one jar at a time, remove empty jars from canning pot and add 1/3 of crushed red and cayenne peppers to each. Pack green beans into jars, leaving 1/2 inch for headspace.
  • Slowly pour hot brine over beans, leaving 1/2 inch for headspace. Use a clean wooden chopstick to work air bubbles out of jars. Slip in additional beans if space allows; check headspace again and add more brine if necessary to bring to 1/2 inch from top.
  • Wipe jar rims, apply lids and bands (not too tightly), and return jars to canning pot. Cover pot and return water to a rolling boil. Process for 10 minutes. Turn off heat, remove pot lid, and let jars stand in the cooling water 5 minutes to help ensure a good vacuum seal.
  • Move jars to a folded kitchen towel or wooden cutting board to cool completely before checking seals. Any unsealed jars should be refrigerated and eaten promptly. Store sealed jars in a cool, dark place. Sealed jars are shelf-stable at least 1 year.

  • PREPARING THE VEGETABLES- Cut cucumber lengthwise without peeling and remove the seeds. Cut it into 2.5 cm long strips. Knead 1 teaspoon of salt and 1 tablespoon of sugar into the cucumber slices and set aside to marinate for 1 hour. The cucumber will secrete some juice. Wrap the cucumber slices in a clean towel or muslin cloth and squeeze out as much liquid as you can or use hand to squeeze manually. This will give the cucumber a nice crunch.- Peel and cut the carrots into thin strips 2.5 cm long.- Cut the beans into 2 cm long.- Cut the cauliflower and broccoli into small florets.- Wash and cut the cabbage into small pieces - use your hands to peel off any damaged outer leaves from the head of the cabbage. Gently rinse each leaf of the cabbage under cool running water. You do not need to scrub the leaves when cleaning them. Drain dry on clean paper towels.
  • BLANCH THE VEGETABLES- In a medium size saucepan, combine 600 ml water, 350 ml white vinegar, 2 tablespoons salt and 2 tablespoons sugar and bring to a rapid boil. Blanch the vegetables one at a time.- Blanch the cabbage for 2-3 seconds, and 10 seconds for the rest of the vegetables (carrots, beans, cauliflower and broccoli). Do not overcook the vegetables, or they will lose their crunchiness. Drain the vegetables and set them aside.
  • MAKE THE PICKLING LIQUID- Combine all the ingredients from “group 1” into a blender and grind to a paste.- In a wok heat 3 tablespoons of oil, and fry the spice paste on medium heat. Stir fry the mixture for a few minutes until the colour of the spice mix darkens and oil starts to separate from the spice paste.- Add 1 cup vinegar, 1/2 cup sugar. Bring it to a boil, then turn off the heat, and set aside and allow to cool slightly.
  • MAKING THE PICKLE- Add in the marinated cucumber, blanched vegetables followed by the sesame seeds, ground peanuts and salt to taste. Stir until well mixed. Allow to come to room temperature then place in clean glass jars and store in the fridge.
