TACO BEEF CASSEROLE
I Just had all the ingredients ,and since I consider myself an excellent cook,I threw it all together! Ground Beef,Taco Seasoning,Onion,Green chilies,Tomato Sauce,Crushed Tortilla Chips, & Shredded Cheese! My Family LOVES IT!

- 1. In a nonstick Skillet, brown grown beef on med-high heat until meat is no longer pink. Drain off grease. Reduce heat and add Onion & Garlic until onion is translucent. Add Taco Seasoning Packet. Stir to combined Add Black Beans,tomato Sauce,Diced Tomatoes,Corn & Green Chilies. Simmer for 10 min.
- 2. Preheat Oven to 350. In a greased 13 x 9 Baking Dish,add Meat mixture. Layer Crushed Tortilla Chips,then layer Cheese. Bake 20 min. or until Cheese is melted! Top each individual serving with Sour Cream! Enjoy!

- Preheat oven to 400°. In a Dutch oven, cook beef over medium heat until no longer pink, breaking into crumbles, 8-10 minutes; drain. Stir in taco seasoning. Add tomatoes, water, rice and green chiles; heat through, stirring occasionally., Meanwhile, prepare cornbread mix according to package directions; stir in corn. Pour half of the batter into a greased 13x9-in. baking dish. Layer with half of the meat mixture, all the sour cream, half of the corn chips and 1 cup cheese. Top with remaining batter, remaining meat mixture, olives and remaining corn chips., Bake, uncovered, until cornbread is cooked through, 55-60 minutes. Sprinkle with remaining cheese; bake until melted, 3-5 minutes longer. If desired, serve with lettuce, tomatoes and red onion.

- Heat oven to 350°F. In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in refried beans, salsa and taco seasoning mix. Reduce heat to medium. Heat to boiling, stirring occasionally.
- In ungreased 2-quart casserole, place 2 cups of the broken tortilla chips. Top evenly with beef mixture. Sprinkle with bell pepper, onions, 1 cup of the tomato, the cheese and olives.
- Bake uncovered 20 to 30 minutes or until hot and bubbly and cheese is melted. Top baked casserole with lettuce, remaining 1/2 cup tomato and remaining 1/2 cup tortilla chips.

- Preheat the oven to 375 degrees F. Lightly oil a 9-by-13-inch casserole dish.
- Heat the oil in a large skillet over high heat. When the oil is shimmering, add the beef and sprinkle with the chili powder, cumin, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, breaking up the meat into smaller pieces, until browned, about 5 minutes. Add the onions and garlic and cook until the onions are soft, about 5 minutes more. Add the beans, salsa and 1/2 cup water and bring to a simmer; cook until the sauce thickens and coats the meat, about 5 minutes. Add salt and pepper to taste. (This beef-and-bean mixture can be made up to a day ahead of time.)
- Lay half the tortilla chips on the bottom of the oiled casserole dish. Spread half the meat mixture on top. Sprinkle half the cheese blend over the meat. Repeat with the remaining chips, meat and cheese. Bake uncovered until the cheese melts and the casserole is hot, about 20 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
- Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture. Layer about half of each of the Cheddar and Monterey Jack cheeses over the tortilla chip layer. Repeat layers with remaining ingredients, ending with Monterey Jack cheese. - Preheat the oven to 375° F.
- Break 12 thinly sliced sandwich steaks into a skillet, cook and toss until browned without overcooking.
- Season with 1/4 tsp.
- of salt, pepper and 1/2 tsp.
- of chili powder.
- Add one (11 oz.) can of tomato soup and one (14 oz.) can of chili beans.
- Cook slowly for a few minutes to heat and blend the flavors.
- Spread a (10-1/2 oz.) package of corn chips in a baking dish, pour the steak mixture over the chips, top with 1/3 cup of sliced ripe olives, 1/2 cup of chopped onions and one cup of grated cheddar cheese.
- Bake in the oven until the cheese melts, and serve piping hot.
- I usually use Philly-Gourmet Sandwich Steaks for this because they are convienantly sliced and 100% pure beef.

- Brown ground beef, adding Taco seasoning when nearly browned with juice from tomato can, I leave in the fat from the burger, drain of you like before adding the seasoning.
- Add tomatoes, cheese soup, and corn.
- Meanwhile, crush the bag of tortilla chips, using more or less of the bag to line the bottom of your casserole dish.
- Pour the heated beef mix on top and bake at 350 degrees for 15-20 minutes, adding shredded cheese to top for 5 minutes or so.
- Serve with whatever you like to accompany mexican dishes - sour cream, fresh tomatoes, lettuce, salsa, etc.
