TANGY TOMATO DRESSING
When I was a little girl my mom made this salad dressing. We like vinegar - so we usually add more than an 1/4 cup. When I make this recipe - I prefer to use the California Garlic Salt.

Steps:
- Combine all ingredients in a small saucepan over medium heat.
- Bring to a boil, whisking often, then reduce heat and simmer, uncovered, for 5 minutes.
- Cover the dressing until cool, then refrigerate it until well chilled.

TANGY SPAGHETTI SAUCE FOR CANNING
This is a very mild spaghetti sauce. Thick and chunky just like we like it. I make this with the veggies from my garden. I have tired many different homemade sauces and this is the first one that has wowed my DH.

Steps:
- Add all ingredients to stock pot.
- Heat to boiling.
- Reduce heat.
- Simmer, partially covered for 2 hours.
- Stir occasionally.
- After it has simmered, fill clean sterilized jars to within 1/2 inch of top of jar. Put on cap, screw the band finger tight.
- Process for 35 minutes for quart jars in a water bath.
- ** You can also freeze in quart size freezer bags.
- This sauce is great on any pasta dish.

- While waiting for the water to boil, begin the tomato sauce in a separate skillet. Mince a clove of garlic and combine it with the olive oil, basil, oregano, salt, rosemary, thyme, crushed red pepper, and cracked black pepper. Heat over a medium flame. Stir the mixture and allow it to start sizzling. Stir and sizzle for about one minute.
- Add the tomato paste, turn the heat down to medium-low, and continue to cook and stir until the mixture turns a darker shade of red (about 2 minutes more). Turn off the heat and then stir in the honey.
- When the water begins to boil hard, add the spaghetti. Cook for 7-10 minutes or until tender. Once the pasta is tender, drain briefly and then add it to the skillet with the tomato sauce. Stir to coat. (Reserve about 1/2 cup of the starchy pasta cooking water to add back into the pasta if it becomes dry while mixing with the tomato sauce).
