Funny thing, but Mom fooled me with this one recipe when she told me it was "a secret family recipe"! I absolutely love this, and I raved about it so much, she couldn't resist keeping it secret. Finally she couldn't keep her secret any longer...She told me when I requested the recipe, "it's on the box of tapioca!" What a...

Apple Tapioca (MOM'S SECRET RECIPE) image

Steps:

  • 1. Mix all ingredients, and simmer for five minutes, add apples, stirring often. Simmer until apples are tender, about twelve to fifteen minutes. I prefer to use a double boiler, and let it simmer longer until apples are soft. No burning in the pan this way.
  • 2. Serve this warm over scoop(s) of the best vanilla ice cream,or over pound cake.
  • 3. I found this silly picture of mom and Paul, and it seemed so appropriate, I had to include it with this recipe! Happy times,taken more than 25 years ago.
  • 4. This morning I had an idea, and knowing there was puff pastry in the freezer, I got it out and let it thaw. Then I pulled out my deep dish apple pie plate, and cut the puff pastry to form a normal shaped pie crust. I spooned the cold apple tapioca into it, leaving room on top for several strips of puff pastry which I twisted and "using water on the ends pressed it onto the outer edges of the pie crust". I baked at 350 degrees for about 40-45 mins. checking every five minutes during the last 15 mins, to be sure it was not burning. It looks delicious! Now I need to buy some ice cream to go on top.

1/3 c quick cooking tapioca
1 c firmly packed light brown sugar
4 c tart apples, cored,pared and sliced
2 c water
2 Tbsp lemon juice
2 Tbsp butter
1/2 tsp cinnamon
1/2 tsp salt
1/4 tsp freshly grated nutmeg
1 qt vanilla ice cream or pound cake.

Steps:

  • In a 4- to 5-qt. slow cooker, combine the milk, tapioca, sugar and salt. Cover and cook on low for 4-5 hours., In a large bowl, beat the eggs; stir in a small amount of hot tapioca mixture. Return all to the slow cooker, stirring to combine. Cover and cook 30 minutes longer or until a thermometer reads 160°. Stir in vanilla., Serve with strawberries and whipped cream if desired.

  • Arrange the apples in a 2-qt. baking dish coated with cooking spray. In a saucepan, combine the water, brown sugar, tapioca, lemon juice, salt and nutmeg. Let stand for 5 minutes. Old-Fashioned Tapioca with Sauteed Nectarines image

Steps:

  • Combine tapioca, sugar, 2 tablespoons honey, salt, eggs, and milk in a medium saucepan, and whisk to combine. Let stand, without stirring, for about 5 minutes. Cook over medium heat, stirring, until mixture comes to a full boil.
  • Transfer to a medium bowl set over a bowl of ice water. Let stand to cool, stirring occasionally, 12 to 15 minutes. When cool, pudding can be refrigerated for up to 1 day before serving.
  • Meanwhile, heat remaining 2 tablespoons honey in a medium skillet over medium heat. Add nectarine wedges, and sprinkle with ground ginger. Cook until fruit is just tender, 2 to 3 minutes. Divide the pudding among four dishes and spoon nectarines over. Top each with a sprig of mint, if desired.

Steps:

  • Cut up large pieces of fruit and combine in pot with cider, 1 1/2 tablespoons of the sugar, cinnamon and nutmeg. Bring to a simmer, and cook for 30 minutes. Drain.
  • Beat egg white until foamy. Gradually beat in 3 tablespoons of sugar, beating until soft peaks form.
  • Mix tapioca with remaining sugar, milk and yolk in saucepan, and let stand for 5 minutes.
  • Cook and stir tapioca mixture over medium heat until it comes to full boil. Gradually add the egg white mixture, stirring just enough to blend. Stir in vanilla.
  • Stir in stewed fruit; cool 20 minutes and serve warm, or refrigerate and serve chilled.
