PERFECT PIE CRUST

The perfect pie crust is tender, light, flaky, and golden and lends itself to all of the Thanksgiving favorites.

Perfect Pie Crust image

Steps:

  • Cut each stick of butter into 8 pieces, and refrigerate until needed. Place the flour, salt, and sugar in a large mixing bowl, and mix to combine.
  • Add the chilled butter. Using a pastry blender, incorporate the butter into the flour mixture; the mixture should resemble coarse meal with small pieces of butter, the size of small peas, remaining visible.
  • Drizzle 2 tablespoons ice water over the flour-butter mixture, and blend. Repeat with an additional 2 tablespoons water. At this point, you may have to add more water: When a handful of dough squeezed together just holds its shape, you've added enough; if the dough crumbles, continue incorporating water, 1 tablespoon at a time, checking the consistency after each additional tablespoon.
  • Turn the dough out onto a clean work surface. Divide into two equal pieces, and place on two separate sheets of plastic wrap. Flatten, and form two disks. Wrap, and refrigerate for at least 1 hour.
  • Lightly dust a clean, dry work surface with flour. Place the chilled dough in the center of the work surface, and dust the dough as well as the rolling pin with flour. Position the rolling pin on the center of the disk, and begin rolling the dough away from you. Give the disk a quarter turn, and roll again. Continue turning and rolling until you have an even 1/8-inch thickness. Turning the dough as you roll will prevent it from sticking to the work surface. A dry pastry brush is handy to remove any excess flour during and after the rolling process.
  • Lightly butter the pie plate. To minimize stretching when moving the dough, roll it around the pin, lift up, and unroll over the buttered pie plate. Using your fingers, gently pat the dough into place. Trim any excess dough with a paring knife or kitchen shears, leaving a 1-inch overhang; then fold dough under to reinforce the edge.

2 1/2 cups all-purpose flour, plus more for rolling out dough
1 teaspoon salt
1 teaspoon sugar
1/4 to 1/2 cup ice water

SUPER EASY TENDER PIE CRUST

This recipe was originally from _Good Housekeeping's Party Pie Book_, 1958 (which I own). It is important to only use vegetable shortening with this recipe and not butter or margarine. It is also important to use just enough water to make the dough stick together. However, this is a very very easy crust to make. After 25 years of struggling to make a decent pie crust, I found this recipe and have yet to mess it up. I think I would have to deliberately do something to mess it up. My kids never used to eat the crusts of my pot pies and other pies. Now they do. By the way, please note that I am not the best at making my pie crusts look pretty, as evidenced by the picture.

Super Easy Tender Pie Crust image

Steps:

  • Measure flour and salt into the sifter and sift into mixing bowl.
  • Cut shortening into flour with a pastry cutter (pastry blender) or two knives until it resembles coarse meal.
  • Sprinkle water, 1 T at a time, over different parts of the mixture while tossing with a fork until all the particles are just sticky enough to stick enough to hold together when pressed and to form a dough that clings to the fork.
  • USE ONLY ENOUGH WATER TO MAKE THE PARTICLES CLING TOGETHER - they should not be wet or slippery. Amount of water needed will vary.
  • Form the pastry into smooth ball between cupped hands. Roll out at once. (If it is a very warm day, you wrap the pastry in waxed paper or foil and refrigerate up to 1/2 hour and then roll out.)

BEST EVER PIE CRUST

You can double or half the recipe without any problem. This is a simple recipe and very tasty! It will be very flaky.

Steps:

  • In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Divide dough in half, and shape into balls. Wrap in plastic, and refrigerate for 4 hours or overnight.
  • Roll out dough on a floured counter. Don't over work it. Use as directed in pie recipe.

Steps:

  • Beat the butter in the bowl of a heavy-duty stand mixer fitted with the paddle attachment at high speed until the butter is smooth, about two minutes. With the mixer running, slowly dribble in the milk, occasionally stopping the mixer and scraping down the sides of the bowl with a silicone spatula. The butter mixture should be fluffy, smooth, and shiny, like a butter cream frosting.
  • Mix the flour, sugar, and salt together in a small bowl. With the mixer speed on low, gradually add the flour mixture and incorporate just until the dough forms a mass on the paddle and the sides of the bowl are clean. Turn out the dough onto a lightly floured surface. Knead a few times until it is smooth and supple. Divide the dough in half. Shape each portion into a disk, about one-inch thick. Wrap each disk in plastic wrap.
  • Refrigerate until chilled but not hard, 30 minutes to an hour. (The dough can be refrigerated up to one day, but it will be very hard, and should stand at room temperature for about 30 minutes before rolling out. The dough can also be frozen, double wrapped in plastic, for up to two weeks. Defrost in the refrigerator overnight.

Lard produces one of the most tender and flakiest crusts out there, but the key (thanks WCA) is to buy a good quality, not over-processed or hydrogenated brand (i.e. Tenderflake) to avoid any "off" aftertaste. Grandma swore by her pie crust for years until Crisco took over the supermarket (sad since lard is actually cheaper and healthier than butter, containing less saturated fat, more monounsaturated fat and has no additives or impurities, like non-organic butter has (i.e. colour, antibiotics and hormones in cow feed) - this is simply her formula updated for the 21st century. Most Tender Pie Crust image

Steps:

  • In a large bowl with a pastry blender or two knives, cut lard into flour and salt until particles are the size of small peas.
  • In a small bowl, combine the remaining 1/4 cup flour, the water and the vinegar, whisk until smooth.
  • Pour all at once into lard/flour mixture; stir with a fork just until the ingredients are combined.
  • Divide dough in half, wrap each in plastic wrap and chill a minimum of 2 hours, preferably overnight (I tried skipping this once - don't!).
