TEX-MEX GREEN SAUCE

Found this on the internet years ago. It is now a family favorite and I make it every year for the snack table at Thanksgiving. I usually omit the green chiles because I'm a wimp. Prep time is a guess, I'm notoriously slow in the kitchen. Cook time is chill time.

Tex-Mex Green Sauce image

Steps:

  • In a medium bowl mash avocados and cream cheese together. Add remaining ingredients except tortilla chips and combine well until smooth.
  • Can also be made in a food processor or blender. Just dump in all ingredients and blend or process until smooth.
  • I usually combine everything except the tomatoes then use an immersion blender. Then add the tomatoes and blend lightly until combined but with some texture remaining.
  • Cover and refrigerate for at least 1 hour to allow flavors to blend. Serve with tortilla chips for dipping.

4 medium avocados, peeled, pitted and cubed
1 (3 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (10 ounce) can diced tomatoes with green chilies (like Ro*Tel)
1 tablespoon garlic powder
2 teaspoons salt
1 teaspoon lemon juice (I use a bit more)
1 (4 ounce) can diced green chilies (optional)
tortilla chips

NINFA'S GREEN SAUCE

This green sauce is popular in many Mexican restaurants around Houston. Ninfa's was one of the first to serve this sauce. The recipe has been printed in the Houston Chronicle several times. I've adapted it slightly. Mama Ninfa Rodriquez Laurenzo opened the original Ninfa's Restaurant on Navigation street in 1973. Her food differed from the usual Tex-Mex restaurants in town. She seemed to achieve fame in the kitchen overnight. Some of her famous guests included George Bush, Michael Douglas, John Travolta, Rock Hudson, and Aerosmith! Mama Ninfa lost her battle with cancer last year, but her much loved Mexican food lives on. The original Ninfa's is still there, and there are several other locations here in Houston as well.

Steps:

  • Peel avocados and place them in a blender.
  • In a medium saucepan, boil tomates, tomatillos, garlic, and jalapenos for 15 minutes.
  • Remove from saucepan and place all ingredients in a blender with avocados.
  • Add sour cream and blend until smooth.

4 fresh tomatillos
3 garlic cloves
3 sprigs fresh cilantro
2 -3 jalapenos
1 1/2 cups sour cream
1/2 teaspoon salt, to taste

CREAMY GREEN SAUCE

This combination of sour cream with tomatoes brings about a delightful, smooth, creamy creation. Feel free to modify to your taste buds! Serve with or over tortilla chips. Sprinkle with your choice of shredded cheese for nachos!

Creamy Green Sauce image

Steps:

  • Heat oil in a large saucepan over medium heat; cook and stir onion, jalapeno pepper, and garlic until onion is softened, 5 to 10 minutes. Add tomatoes, tomatillos, avocado, and water to onion mixture; bring to a boil. Reduce heat and simmer until tomatoes are softened and liquid has evaporated, about 15 minutes. Remove saucepan from heat and cool slightly.
  • Blend tomato mixture, sour cream, cilantro, and salt together in a food processor or blender, working in batches if necessary, until sauce is smooth.

Most recipes are calling for green chilies....this one uses fresh tomatillos and jalapeños. This sauce is hot and goes great with enchilada, tacos or frittatas. From Fast, Fresh & Spicy Vegetarian by John Ettinger. One pound of tomatillos is around 11.

Steps:

  • Boil the tomatillos and jalapenos in salted water until just tender, about 10 minutes, then drain.
  • Place in blender or food processor with cilantro, onion and garlic (mint, if desired) and blend until smooth.
  • Heat oil in a skillet over medium-high heat. Pour sauce in and stir for 5 minutes.
  • Add broth and salt, return to a boil, then simmer for 8 to 10 minutes until thickened.

  • In a stockpot, add all of the ingredients besides the cilantro, honey, optional spinach if using, and lime juice. (Those will be added fresh.)
  • Add the chopped veggies to the stockpot and place over medium-high heat. Bring to a boil, and then lower the heat and simmer for 20 minutes until all of the vegetables soften. Remove from heat and cool 10-15 minutes.
  • Pour this mixture into a blender. Add all of the rest of the ingredients. Blend for 1-2 minutes. Taste for salt, it will likely need about 1 t. more.
  • Wash out the original pot you boiled the tomatillos in. Pour the blended salsa verde sauce back in the pot and return it to the heat. Bring to a boil and boil it for 5 minutes, scraping the bottom with a rubber spatula to avoid burning the bottom. When the salsa verde is the thickness you desire, remove it from the heat and season to taste with additional lime juice, salt, or even a little bit of honey if needed to balance the flavors.
