These are great if you don't have a smoker, but if you have access to a good hickory or pecan fire, take advantage. 20 MINUTE SKILLET REFRIED BEANS
Steps:
- In a large skillet, melt butter over medium heat. Add diced onion and saute for 4-5 minutes or until onion is translucent.
- Add garlic to melted butter and onions and saute for another minute.
- Add pinto beans (don't wash and drain them first - just dump in the whole can), cumin, chili powder and cayenne powder to skillet. Cook for about 5 minutes or until beans are heated through.
- Using a potato masher, mash beans until they become the consistency that you prefer (my husband likes them completely smooth while I prefer them to be a little chunky. You could also put the beans in a blender to make them super smooth).
- If desired, top with some shredded cheese and fresh cilantro.

TEXAS BEANS IN TWENTY MINUTES
Yummy bean side dish that tastes great and cooks up fast! I got this from the Texas Beef Council, cuz ya know we raise cattle! :) BUT of course I had to play with it and change it up a little. I used turkey bacon in here but you can use any bacon you like, even fake bacon to make this vegetarian. Enjoy!

Steps:
- Spray a skillet really well with cooking spray (or add a little veg oil) and saute chopped turkey bacon* or soy bacon*, onion, bell pepper and garlic. Keep stirring so that it doesn't stick and everything gets cooked on all sides. About 3 to 5 minutes or until onion is tender.
- Stir in remaining ingredients, cover and cook 5 minutes or until heated through, stirring occasionally.
- Serve!
- *Note: If you choose to use regular bacon cook it first and then drain and crumble. Pour off any grease from the pan leaving a tiny bit to saute the veggies.
