THAI CHICKEN CAKES WITH SWEET CHILLI SAUCE

A light and healthy supper that's a great variation on the chicken theme. Works well as a starter or a main - just serve with sweet chilli sauce.

Thai chicken cakes with sweet chilli sauce image

Steps:

  • Toss the chicken, garlic, ginger, onion, coriander and chilli into a food processor and season well. Blitz until the chicken is finely ground and everything is well mixed. Use your hands to shape six small cakes.
  • Heat the oil in a frying pan, then fry the cakes over a medium heat for about 6-8 mins, turning once. Serve hot, with sweet chilli sauce, lime wedges, coriander, shredded spring onion and red chilli.

2 large boneless, skinless chicken breasts (about 175g), cubed
1 garlic clove , roughly chopped
small piece fresh root ginger , peeled and roughly chopped
1 small onion , roughly chopped
4 tbsp fresh coriander , plus a few sprigs to garnish
1 green chilli , seeded and roughly chopped
2 tbsp olive oil
sweet chilli sauce , lime wedges, shredded spring onion and red chilli, to serve

Steps:

  • Place the chicken, garlic, ginger, onion and coriander in a food processor with the chilli and season to taste. Blitz for 15-20 seconds.
  • Shape the chicken mixture into small cakes
  • Heat the olive oil in a frying pan over a moderate heat and fry the chicken cakes until golden.
  • Serve immediately, with sweet chilli sauce and sliced spring onion.

2 chicken breasts, cubed
1 garlic clove, roughly chopped
1 cm finely chopped fresh gingerroot, knob, roughly chopped
1 small onion, chopped
2 tablespoons coriander, chopped
1 green chili, chopped
1 pinch salt & freshly ground black pepper

Steps:

  • Whisk all ingredients together until sauce is well blended.
  • Melt better in a large skillet over medium heat.
  • Add bell pepper, green onions, and garlic; saute 3 to 4 minutes or until vegetables are tender.
  • Stir together bell pepper mixture, chicken, and next 5 ingredients in a bowl.
  • Shape chicken mixture into 8 (3 1/2-inch) patties.
  • Fry 4 patties in 2 tablespoons hot oil in a large skillet over medium heat 3 minutes on each side or until golden brown.
  • Drain on paper towels.
  • Repeat procedure with remaining oil and patties.
  • Serve immediately withRemoulade Sauce (recipe follows).
  • REMOULADE SAUCE: Whisk all ingredients together until sauce is well blended.

Steps:

  • Process chicken, lemon grass, garlic,fish sauce, spring onion, lime juice, coriander, egg and coconut milk.
  • Process till fine but not smooth.
  • Spoon into greased patty tins.

  • To make the dipping sauce, place all the ingredients in a small saucepan over medium heat. Stir to dissolve the sugar and bring to the boil. Reduce the heat and simmer for 5 minutes or until slightly reduced. Set aside.
  • Place the minced chicken in a food processor and pulse for 2 minutes or until it forms a smooth paste. Add the egg, curry paste, sugar and fish sauce and pulse to combine. Transfer the mixture to a bowl and stir in the lime leaf, coriander, spring onion and lemongrass until well combined.
  • Grease a baking tray with a little oil, then lightly grease your hands with oil to prevent the chicken mixture sticking to them. Shape heaped tablespoons of the mixture into patties about 6cm in diameter. Place the patties on the greased baking tray.
  • Half-fill a deep saucepan with oil and heat to 160C, or until a cube of bread dropped into the oil turns golden brown in 30-35 seconds. Deep-fry the chicken patties in batches, using a lightly oiled palette knife to lift them from the tray and carefully put them in the oil, for about 4 minutes, turning halfway through cooking, until golden and cooked through. Use a slotted spoon to transfer onto paper towels to drain while you cook the remaining patties. Serve the chicken cakes warm with the dipping sauce.
