THAI COCONUT CAKE WITH MANGO SAUCE

Light wonderful cake that is even better with the yummy mango sauce! Recipe was found on About.com and was by Darlene Schmidt. So good wanted to keep it here and thought I'd share!

Thai Coconut Cake With Mango Sauce image

Steps:

  • Preheat oven to 350.
  • Grease a tube pan.
  • Beat the egg WHITES on high for about 3 minutes - till they resemble whipped cream, and set aside. (Doing this first helps insure no grease from the next steps carries over on the beater/bowl and prevents them from whipping up!).
  • Beat the egg YOLKS, adding in the sugar, salt, oil, coconut milk and coconut extract.
  • Add the baking powder and then the flour to the yolk mixture.
  • Beat just till blended.
  • Fold the egg whites into the yolk mixture just till incorporated - you want to keep it as fluffy as you can but still mixed.
  • Pour into your prepared pan and bake for 30 minutes - or till the top is golden brown and an inserted knife/cake tester comes out clean.
  • Sauce:.
  • Place all the sauce ingredients into a blender or food processor and blend till smooth.
  • To serve:.
  • Warm the mango sauce in a saucepan.
  • Cut slices of the cake and plate them.
  • Pour warm sauce over.
  • If desired garnish with freshly toasted unsweetened coconut.

1/2 cup brown sugar
1 pinch salt
1/2 cup oil
1/4 cup coconut milk (NOT sweetened, stir before measuring)
2 teaspoons coconut extract
2 teaspoons baking powder
1 cup all-purpose flour
2 mangoes, peeled and cubed (about 1 1/2 cups)
3/4 cup coconut milk
1/4 cup brown sugar
1 teaspoon coconut extract
1 teaspoon vanilla extract

I am in a group of people that shares recipes, so I asked someone if they had a thai coconut cake, because every time I am at my parents I want one from the local thai place. I wanted to make one of my own, and this is the closest to that amazing cake so here ya go! Exactly as was shared with me!

Steps:

  • 1. 1. Prepare cake according to package directions. Bake in a 9x13 inch pan. Cool completely. 2. In a small bowl combine cream of coconut and condensed milk. 3. Poke holes in cake with a straw. 4. Pour milk mixture over cake and spread with whipped topping. Sprinkle coconut over cake 5. Serve chilled

10 oz coconut (flaked)
1 white cake mix (suggested 16 oz)
14 oz can cream of coconut
14 oz sweetened condensed milk
16 oz cool whip (i only use cool whip, but you could use generic), thawed

  • Prepare inner layer / custard: Combine all inner layer / custard ingredients in a small saucepan over medium heat. Whisk well to combine. Bring to a simmer. Simmer, whisking frequently, until the mixture visibly thickens, 2 to 4 minutes. Set aside.
  • Prepare outer layer / shell: Combine coconut milk, rice, rice flour, sugar and salt in a blender. Blend until smooth. Add mineral water and pulse blender once or twice just until incorporated. (The batter should be a smooth consistency that pours easily, similar to pancake batter. If it is too thick to easily pour, add more mineral water a bit at a time.)
  • Heat an Ebelskiver or Takoyaki pan over medium heat. When the pan is hot, brush the inside of the holes with coconut oil (you can melt the oil first and do this with a brush or use a paper towel to carefully rub oil on the insides).
  • Pour shell batter into each of the holes, leaving about 1/4 inch of headspace at the top. Then quickly use a 1 teaspoon measuring spoon to spoon the custard batter into the center.

  • Step 2: Next add 120g of coconut cream and 2 eggs to the mix, and mix everything together thoroughly until it as smooth as you can get it.
  • Step 3: Now pour the mixture into a non stick baking dish – try to use a dish thats small enough that the mixture will be around 1/2 inch deep, it will rise a bit when we cook it, but the cake shouldn’t be too thick.
  • Step 4: Now place the cake in the oven, and cook at around 220 degrees celsius for 20 minutes. After 20 minutes take the cake out of the oven and brush an egg yolk over the top of the cake. Then put the cake back in the oven for another 10 to 15 minutes until it is golden brown on top. Check often to ensure that it doesn’t burn! Then just allow the cake to cool for about 15 minutes, then you can cut it up and eat it!
