Make our easiest ever flatbread recipe with just a handful of ingredients. They're perfect for mopping up a warming curry or saucy shakshuka

Steps:

  • Sift the flours and 1 tsp salt into a large bowl. Add 1 tbsp of the oil and 150ml warm water. Bring together into a soft but not too sticky dough (you may need up to 175ml water). If it feels too wet, add some flour. If it's too dry, add water.
  • Tip onto a floured surface and knead for 4-5 mins, or until smooth. Put the dough in an oiled bowl, cover and leave for 30 mins.
  • Tip onto a floured surface. Divide into six balls and roll each out into a thin, 18-20cm wide circle using a rolling pin. If you prefer, you can divide again into twelve balls to make smaller flatbreads.
  • Brush a heavy-based pan with oil and cook one flatbread over a high heat for 1-2 mins on each side, or until golden and starting to puff. Put on a plate and brush with butter. Repeat with the rest of the dough.

Steps:

  • Stretch pizza dough to desired size. Brush with olive oil. Evenly distribute remaining ingredients over the top of the dough. Bake in 450 degrees F. oven until golden on bottom (about 15 to 20 minutes).

6 ounces pizza dough
2 ounces olive oil
1 ounce chili-garlic sauce
2 tablespoons scallions, chopped
2 garlic cloves, minced
3 tablespoons lemongrass, minced (or 1 Tbsp. lemon zest, minced)
1 teaspoon fish sauce
1 tablespoon peanut sauce mix
4 tablespoons white wine

  • Mixing the Paratha Dough. Next, I make a well in the center of the flour mixture and pour in warm tap water. The warm water helps the flour come together fast into an easy-to-handle, smooth dough.
  • Resting the Paratha Dough. After mixing, I cover the dough with a moist kitchen towel or plastic wrap and set it aside to rest for at least one hour.
  • Laminating the Paratha Dough. In order to develop all its flaky layers, parathas get a double roll, so you can sneak in an upper-body workout while you cook.
  • Rolling Out the Paratha Dough. For the second roll, each coil of dough is rolled out until it is about eight inches in diameter and one-eighth of an inch thick.
  • Par Cooking the Parathas. Most flatbreads are cooked over high, direct heat—just imagine naan charring against the wall of a tandoor or tortillas blistering over a comal.
  • Frying Paratha in Ghee. For the final cook, the parathas are fried in ghee to finish cooking and develop a golden brown color. I preheat a skillet over medium-high heat, add a spoonful of ghee and fry up one paratha at a time.
