- Bring water to a boil in a small saucepan. Remove from heat and add black tea; let steep about 10 minutes or to desired strength.
- Strain tea into a container and discard leaves. Add sugar and evaporated milk; stir until sugar is dissolved.
- Fill 2 glasses with ice. Pour tea over ice. Top each glass with 1 1/2 teaspoon milk.

- Fill glasses with crushed ice. Pour tea into glasses and top with half-and-half.

This is the perfect Thai iced tea recipe! Find Thai tea leaves at any Asian market. It's so easy to make this refreshing drink...be careful, you may become critical of your favorite Thai restaurant's concoction because you can do it better. Some Thai tea mixes have food coloring in them to make them bright orange and some are labeled as "Thai tea powder", so making it from scratch gives you the best flavor.

- Place tea leaves in a tea filter bag and secure.
- Pour water into a pot and bring to a boil. Add tea bag and sugar. Return to a boil and stir until sugar has dissolved, about 3 minutes. Remove from heat and allow tea to steep for 30 minutes.
- Discard tea bag. Let tea cool to room temperature. Refrigerate for 3 to 4 hours, or overnight.
- Fill 2 glasses 2/3 full of chilled tea. Slowly pour 1/4 cup coconut milk into each glass.

THAI ICED TEA
Steps:
- Heat tea in a pot on the stove until hot, but not boiling. Add sweetened condensed milk and chai latte mix. Stir until latte mix is dissolved. Stir in remaining ingredients and let cool to room temperature. Stir in Irish whiskey and cream-based liqueur, if desired.
- Fill highball or iced tea glass with ice. Pour tea over ice.
THAI ICED TEA

- Bring water to a boil in a medium saucepan. Place tea in a tea sock, add to the boiling water, remove from the heat, and let steep for 5 to 10 minutes, depending on how strong you like your tea. - In a kettle, bring the water to a boil. Place the tea in a teapot or glass container. Pour the water over the tea and let steep until bright orange in color, 3 to 5 minutes. Strain into a clean container, such as a pitcher (or, if in tea bags, remove the bags). Add sugar and stir to dissolve. Let cool to room temperature, then cover and refrigerate until ready to serve.
- Fill 6 tall glasses with crushed ice and add tea to 3/4 full. Add 1 tablespoon cream and 1 tablespoon condensed milk to each glass.

THAI ICED TEA RESTAURANT STYLE (GOOD UP TO A WEEK)
This is a very strong concentrate used at restaurants. Just remember do not mix the tea with Sugar Syrup and or half-and-half until ready to serve. If you do not used Pantai Norasingh Thai Tea Mix add 2 tablespoons of crushed cardamom pods in addition to your Thai tea mix. If you cannot find a Thai Tea Mix you can used: 2 tablespoons of crushed cardamom pods, 1/2 tablespoon clove (crushed), 3 tablespoons tamarind seeds (crushed), 2 teaspoons whole coriander seed (optional), 4 to 8 whole star anise (crushed), 1/4 teaspoon vanillin powder, 2 1/2 cups strong loose leaf black tea (such as Darjeeling or Assam) and added 5 minutes before the first straining 1/2 teaspoon orange extract and 5 rosebuds.

- TEA DIRECTIONS:.
- Bring one gallon of water to a boil.
- Reduce heat to low.
- Stir in tea leaves, cinnamon, black pepper, chili pepper, and coffee.
- Stir for 2 to 5 minutes until most of the tea leaves start to sink.
- Cover.
- Remove mixture from heat and let steep 10 minutes.
- TIP: If you want a clean crisp tea fill the pitcher up with ice before adding and straining the tea. If you want a dark bold flavor do not add the ice at this step!
- Pour tea through a "Cloth Tea Filter Sock" or nylon sock into a pitcher, discarding tea leaves .
- Cool to room temp (if iced cool until ice is melted).

- TEA SUGAR SYRUP DIRECTIONS:.
- Mix all ingredients a large pot.
- Cook at medium to high heat.
- Once the mixture boils remove from stove immediately.
- Let cool and refrigerate.
- TO SERVE:.
- Fill a glass with 7 oz crushed ice pour tea over ice up to 8 oz.
- Add 1/2 to 2 oz of Sugar Syrup.
- At "tableside" add 1 to 2 oz of half-and-half.
- Traditional Variation: Substitute coconut milk or evaporated milk for half & half.

Everything on their menu is vegan, altho they offer some vegetarian dishes at their takeout counter. 1 of their MOST requested recipes is their Tangled Thai Salad (recipe entered by me) & FRESH uses this "Salad Topper" w/the Tangled Thai Salad. Per the recipe intro: "This crunchy mix adds great flavor & texture to any salad. If you want to use it as a topper for fruit salad, yogurt or oatmeal - Leave the salt out & replace it with sugar. If you can't find puffed quinoa at your local health food store, you can sub puffed millet. This recipe makes 1 3/4 cups & the mixture keeps for months in an airtight container." - Place unpeeled potatoes in a lrg saucepan, cover w/water, bring to the boil & cook for 20 min or until very tender. Remove from the heat & allow to cool.

They have published 3 cookbooks described as "for those relatively comfortable w/cooking (particularly vegan cooking)" & "with restaurant quality pretty much guaranteed". This recipe is FRESH's famous Tangled Thai Salad - 1 of their MOST requested recipes. FRESH uses a "spiralizer" to cut the carrot & yellow beets into super-long, thin strands that form a big round tangle of a salad, but a julienne peeler will give you nice long strands as well. If you have no spiralizer or julienne peeler, just cut the veggies into sticks as thin & long as you can. Said to serve "1 person as a complete meal", it also serves 2-3 as a side-salad. FRESH uses their "Salad Topper" w/this Thai salad, but I saw it as optional & have entered it as a separate recipe. This is a no-cook recipe & I have allowed 20 min for ingredient prep plus assembly. - For the Salad:.
- Put napa cabbage in a lrg, shallow serving bowl & top w/jicama.
- Pile the carrot & beet on top & drizzle w/the dressing.
- Garnish w/cucumber, peanuts, Salad Topper (if using - recipe entered separately), lime & cilantro. Drizzle w/4 tbsp of the Peanut Lime Dressing.
- For the Dressing:.
- In a blender, puree all ingredients except the sunflower oil.
- W/blender running, add sunflower oil in a thin stream until dressing is emulsified.
- NOTE - "The Peanut Lime Dressing makes 1 cup, keeps for a wk in the fridge, is delicious on the Tangled Thai Salad & would be equally good on any salad or even poured on top of cold noodles.".
TRADITIONAL THAI ICED TEA WITH STAR ANISE

- Bring 1/2 gallon of cold water to a boil. Add 8 finely crushed star anise pods, 1 teaspoon orange blossom water, the scrapings of 1 vanilla pod or 1 tablespoon vanilla extract, a pinch each of ground cloves and ground cinnamon, and 1/2 cup Chinese black tea leaves.
- Boil for 3 to 5 minutes, stirring occasionally. Remove from the heat and stir in 1 cup sugar and a few drops of red food coloring (optional, though traditional). Cover, steeping until tepid.
- Strain & place in the refriderator for a few hours to really chill.
- Pour the tea over plenty of crushed ice. Top with half-and-half or sweetened condensed milk.

- Add the tea and remove the pan from heat.
- Stir to submerge all the tea leaves in the water.
- Steep for about 5 minutes.
