THANKSGIVING CABBAGE SALAD

Here's a terrific coleslaw to include with all the fixings for your holiday meal. Just dice up apples and cabbage, whisk the sauce, and don't forget the pretty red cranberries.

Thanksgiving Cabbage Salad image

Steps:

  • In a small bowl, combine apples and lemon juice. In another bowl, combine the cream, sugar, cumin seeds, salt and pepper; gradually whisk in vinegar., In a large bowl, combine the green cabbage, red cabbage, cranberries and apples. Add dressing and gently toss to coat. Cover and refrigerate for at least 1 hour before serving.

2 medium apples, chopped
1 tablespoon lemon juice
1 cup heavy whipping cream
2 tablespoons sugar
2 tablespoons cumin seeds
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon red wine vinegar
6 cups shredded green cabbage
2 cups shredded red cabbage
2/3 cup dried cranberries

SCRUNCHED CABBAGE SALAD WITH GRAPEFRUIT AND CHILES

Not just for slaw, cabbage is a snappy base that can handle lots of refreshing acidity-in this case from torn grapefruit and hot-and-sour chiles-without withering.

Scrunched Cabbage Salad with Grapefruit and Chiles image

Steps:

  • Cut cabbage in half lengthwise. Cut notch in base of each half to remove core; discard. Tear leaves into 2" irregular pieces and place in a large bowl. Drizzle with vinegar and season with sea salt. Massage and scrunch cabbage firmly with your hands to soften and season leaves.
  • Using a sharp knife, cut peel and white pith from grapefruit; discard. Cut grapefruit into quarters, then coarsely tear quarters into chunky pieces. Remove and discard any seeds or thick membranes. Add grapefruit to bowl with cabbage. Drizzle 2 Tbsp. oil over and toss to coat. Add mint and toss again.
  • Transfer salad to a large platter. Drizzle with more oil and top with pickled chiles and Sesame Salt.

1 head of Napa cabbage (about 2 lb.)
1/4 cup pickled chile vinegar (from Pickled Hot Chiles)
2 Ruby Red grapefruit
2 Tbsp. extra-virgin olive oil, plus more for drizzling
1 cup mint leaves
1 Tbsp. Pickled Hot Chiles
2 Tbsp. Sesame Salt

SHREDDED CABBAGE SLAW WITH GINGER VINAIGRETTE

An Asian twist on classic coleslaw, this bright salad combines red and green cabbage varieties and gets its tang from yuzu-infused rice-wine vinegar, a generous squeeze of lime, and freshly grated ginger.

Shredded Cabbage Slaw with Ginger Vinaigrette image

Steps:

  • Whisk together vinegar, lime juice, ginger, and sugar. Whisk in oil; season with salt and pepper. Toss in a large bowl with cabbages and carrots. Top with sesame seeds.

2 tablespoons yuzu rice vinegar, such as O brand
1/3 cup fresh lime juice (from 2 limes)
1 tablespoon grated fresh ginger (from a 2-inch piece)
1 tablespoon sugar
2 tablespoons vegetable oil
Kosher salt and freshly ground pepper
4 cups finely shredded Savoy or green cabbage
2 cups finely shredded red cabbage
2 cups finely julienned carrots (from 3 to 4 medium)
Toasted sesame seeds, for serving

Spicy Cabbage Salad with Turkey and Peanuts image

Steps:

  • Toss cabbage and 1/2 tsp. salt in a large bowl. Massage vigorously with your hands until cabbage begins to release water and soften, about 2 minutes (this will both season and tenderize the leaves). Drain; set aside.
  • Mix anchovies, lemon zest, lemon juice, vinegar, soy sauce, miso, and sugar in a large bowl; whisk in oil. Add cabbage, celery and celery leaves, scallions, chile, cilantro, and turkey meat to bowl and toss to combine; season with salt.
  • Serve salad topped with peanuts and sesame seeds.

  • Dressing can be made 1 day ahead. Cover and chill. Rewhisk before using.

1/2 medium head of green or savoy cabbage, cut into 1-inch pieces
1/2 teaspoon kosher salt, plus more
4 oil-packed anchovy fillets, coarsely chopped
1 teaspoon finely grated lemon zest
3 tablespoons fresh lemon juice
2 tablespoons unseasoned rice vinegar
1 tablespoon light soy sauce

1 tablespoon vegetable oil
4 celery stalks, thinly sliced on a diagonal, plus 1/2 cup celery leaves

1 serrano chile, thinly sliced
1 cup cilantro leaves with tender stems
1 cup shredded cooked turkey meat
1/3 cup coarsely chopped salted, roasted skin-on peanuts
