THE MAI-TAI FROM POIPU BEACH (MAI-TAI MEANS "GOOD" IN TAHITIAN, POIPU MEANS "CRASHING WAVES" IN HAWAIIAN.
I took my wife Jeannie to Poipu Beach, Kauai in 1985, a honeymoon 25 years late. Poipu is on the SE corner of Kauai. While raining everywhere else, Poipu is always sunny. We stayed at the old Poipu Beach hotel and each day at about 5:00 had a Mai-Tai like this. (It was immortalized in a watercolor by Paul Brent the artist, shown in the image.) On the morning we had to leave God gave us a double rainbow over the ocean.

- Shake all but 1/2 ounce of dark rum with half glass of shaved ice.
- Pour into cocktail glass. Top with 1/2 ounce of dark rum.
