UGLY CAKE
This is a very yummy cake that people always ask me to make for parties. It's also very easy but so good!

Steps:
- Mix the ingredients for the first layer and press into a 9 x 12 greased pan.
- Beat the ingredients for the second layer with a mixer and pour over first layer.
- Bake at 350°F for 35 minutes.
THE UGLY CAKE
THIS IS A FAVE OF A FELLOW ARMY WIFE I KNEW BACK IN THE EARLY 80'S. SHE WOULD MAKE IT FOR OUR MONTHLY COFFEES. AS MY FRIEND USE TO SAY "THIS UNFROSTED CAKE IS TOO UGLY TO SERVE ANYONE FOR YOUR FAMILY AND NEAREST AND DEAREST FRIENDS. JUST CLOSE YOUR EYES AND ENJOY!"

- 1. MIX BUTTER, CAKE MIX, 1 EGG AND PECANS UNTIL CRUMBLY. SPRAY 9x13 PAN WITH COOKING SPRAY. PAT MIXTURE INTO BOTTOM OF PAN. IN MIXING BOWL, COMBINE POWDERED SUGAR, 2 EGGS, CREAM CHEESE AND VANILLA. POUR ON TOP OF MIXTURE IN PAN.
- 2. BAKE AT 325 DEGREES FOR 35 TO 40 MINUTES. CAKE WILL LOOK OKAY IN THE OVEN, BUT AFTER IT COOLS, THE CENTER WILL FALL AND THE CAKE WILL LOOK LIKE A MOON CRATER.
ORIGINAL UGLY DUCKLING CAKE
From the early 70s, this cake is easy and moist. Made with a cake mix and canned fruit cocktail, it's really not ugly at all.

- 1. Preheat the oven to 325 degrees and spray a 9x13 inch baking pan with nonstick cooking spray.
- 2. In the bowl of an electric mixer, add cake mix, fruit cocktail with syrup, 1 cup of the coconut and the eggs. Mix on medium low for 2 minutes, or until well blended. Pour into prepared pan. Sprinkle with brown sugar. Bake 45 minutes, or until set but don't overbake.
- 3. While cake is cooking, make topping by heating the butter, sugar and milk on medium low in a saucepan, stirring occasionally. Once it boils, boil for 2 minutes. Remove from heat and add remaining coconut. Pour over hot cake when removed from oven. Serve warm or cool.
APPLE UGLY CAKE
Don't let the name of this recipe fool you. It may not be the prettiest cake you've ever seen, but it sure is the delicious! I've made this for a tea party, office luncheon, brunch and dessert. It's always a hit. Delicious served with vanilla ice cream.

- Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13 inch pan.
- In a large bowl, stir together the sugar, flour, baking soda, salt, and cinnamon. Make a well in the center, and pour in the oil, eggs and vanilla. Mix until well blended. Fold in the raisins and apples. Spread evenly in the prepared pan.
- Bake for 1 1/2 hours in the preheated oven, until firm and lightly browned.
