Using 2 flours and a meal, this is called third bread and can be found in many old cookbooks. It is light, honey colored bread that will sink a bit in the middle. It has a chewy crust and sweet, rich satifying flavor.

Steps:
- Place all bread dough ingredients in bread machine and select dough cycle.
- When cycle is complete, remove dough and roll into a 12"x15" rectangle on a lightly floured board.
- Roll up from long side and pinch seam to seal.
- Fold ends under.
- Place seam side down on greased baking sheet that has been dusted with cornmeal.
- Cover loosely with plastic wrap and let rise for 45 minutes.
- Make 4 diagonal cuts with a sharp knife across top of bread.
- Bake at 375° for 25 minutes.
- Beat egg white and water; remove bread from oven and brush with egg wash.
- Return to oven and bake an additional 5 minutes.

SOURDOUGH THREE GRAIN BREAD (ABM)
I was inspired by Donna M's #32194, which I love dearly to create a bread with additional grains which would please my DH & DS, who love multi grain bread. So using her recipe as a guide this is the bread I created today. It turned out a beautiful loaf and was enjoyed by my men. I have to admit for someone who usually isn't fond of multi grain bread I found it pretty tasty too. I used flax seed meal as one of my grains because I heard from a doctor that flax seed is one of the most healthy grains we should be using. It takes so little to have big health advantages as well.

Steps:
- Place ingredients in your bread machine in the order recommended by the instructions of your machine.
- Select the dough cycle and start.
- Listen for the end of the first kneading.
- Do not let it raise in the machine since most sourdough breads especially those using wild yeast since they raise best if only raised once.
- As you take out the dough spray it lightly with a spray oil product to assist in the handling since the dough will be soft.
- Shape into desired shape.
- Let raise until double in size.
- (Sourdough breads usually take 3 to 4 hours to rise if they don't have added yeast.).
- If using a metal loaf pan grease well.
- If using a stoneware loaf pan lightly spray with spray oil then sprinkle sides and bottom with cornmeal.
- If using a round stone simply sprinkle with cornmeal.
- Bake 350 degrees for about 30 minutes.
- Remove immediately from pan, lightly baste top of bread with butter or margarine and cool on a rack before slicing or slice with an electric knife which works well on hot bread.
CIABATTA BREAD FOR ABM
Called Italian slipper bread because of its rustic shape that resembles a slipper. This chewy, homely loaf is great with a chunk of Parmigiano-Reggiano cheese and sliced dry sausage. Since the dough is so wet, the bread machine is the perfect place to make it. You can buy ready made dough enhancer or make your own...this improves rise, texture, crumb and crust. I have not made this recipe, but posted it for a request. Recipe was found on Breadmaker's forum website. Bake time is an estimation, as no time was given.

Steps:
- Place first 5 ingredients in bread machine in order listed.
- Program machine for dough or manual cycle and press start.
- Check dough after first few minutes of first knead cycle and add more water if necessary to form very wet batter-like dough that barely forms ball and does not clean sides of pan.
- Allow dough to go through one knead cycle and one rise cycle only.
- Line very large baking sheet with parchment paper.
- Pour and scrape dough onto lightly floured work surface.
- Using dough scraper, divide dough into 3 equal pieces.
- Using floured hands, transfer dough pieces to prepared baking sheet, forming flat irregular oval shapes and spacing at least 2 1/2-inches apart.
- Drizzle tops with olive oil and allow dough to rise in warm draft-free area until almost doubled, about 20 minutes (longer, if needed).
- Position rack in upper third of oven just below highest position and preheat oven to 450 degrees F.
- Press fingertips into dough in several places to dimple surface (characteristic of this bread).
- Bake until tops are dry (if using Sourdough Enhancer, loaves will remain pale after baking).
- Transfer ciabattas to rack and cool at least 15 minutes before serving.

- Mix all ingredients and store in tightly closed glass jar.
- Add to breadmaker in amount EQUAL to yeast with other dry ingredients.
- The ginger makes the yeast act more swiftly, the ascorbic acid strengthens the gluten, and the lecithin aids the oil in causing the strands of gluten to slip against each other more easily and thus rise better.

- Select the 1 1/2 lb loaf size. Add the ingredients according to the manufacturer's directions. Select the basic white bread cycle.
- This recipe also came with a Powdered Sugar Glaze recipe you can drizzle over the bread. I don't use it because we prefer this bread toasted but if you want to try it:.
- In a small bowl stir together 1/2 cup sifted powdered sugar and enough milk (1-2 tsp) to make a glaze of drizzling consistency.

This is our everyday bread that we use for sandwiches and toast. It's dairy and egg free which makes it a favorite of mine - this also makes it safe to use the bread machine timer. This recipe makes a 2 pound loaf, but you can easily halve it for smaller machines.

Steps:
- Start at the top (recommended) or the bottom of the list, and put all the ingredients into the bread machine. Just make sure the salt and wet stuff stays away from the yeast until it mixes. If you like the old fashioned way, that will work too - just use your usual process.
- For rolls, use the dough cycle. When that cycle is done, dump it out on a floured surface and cut everything into even quarters, twice. Put the wads, evenly spaced, on a lightly oiled cookie sheet. Let them rise once more in a warm area covered with waxed paper for a half hour or a little longer until they have roughly doubled in size, depending on how knocked down they got while cutting. Cook in an oven, preheated to 375 degrees, for 20 minutes or until they are nicely browned top and bottom. Brush with melted butter if desired.

BEST EVER WHITE BREAD (ABM)
This is a recipe I developed from lots of trial and error. I just kept experimenting with my bread maker. This same dough makes beautiful dinner rolls as well.

- Place ingredients in bread maker following your manufacturers guidelines.
- Personally I only mix it up in the bread maker. When it is done proofing I turn it out onto a floured surface shape it and place it in a greased (cooking spray) loaf pan. Let rise for approx 1 hour, til doubled. I bake for 30 minutes at 350 degrees.
BEST WHITE BREAD (ABM)
The base for this recipe was originally from Allrecipes but I've changed the recipe to suit my breadmaker and taste. When I made my first loaf of this I couldn't believe I had made something that looked and tasted like a commercially produced loaf. NOTE: My ABM is older and takes 2 1/2 hours to do a dough cycle. The times include rising time also.

Steps:
- Place the ingredients into your ABM in the order specified for your machine. Set it on the dough cycle.
- When the dough cycle has beeped, LEAVE the dough in the machine for another 30 minutes. It will continue to rise again.
- Preheat your oven to 190°C Grease a 9x5x3 loaf pan with butter.
- Tip out your dough onto a lightly floured work area and roll into a long rectangle, making sure the width is no wider than 9 inches and about 1/2 inch thick. It doesn't matter about the length. You will hear all the air bubbles popping as you roll.
- Once the air bubbles are gone, roll up, starting from one of the short ends. You may want to moisten the end of the dough to help seal it together.
- Place roll of dough, seam side down, tucking ends under, in your loaf pan.
- Leave to rise until doubled in size, approximately 30-40mins. Brush with melted butter.
- Bake 190C for 30 minutes or until the loaf sounds hollow when tapped with the handle of a knife.
- While loaf is hot brush with melted butter.
- Remove loaf from pan onto a cooling rack.
