ALCOHOLIC PURPLE PASSION

I found this recipe in a book called "Great American Favorite Brand Name Cookbook" and I have not tried it yet, but I'm trying to get some stuff up here before I have to return the book. So if anyone tries it and has any comments, let me know. Hope you enjoy!

  • In pitcher, combine all ingredients except ice, grapes and mint; stir until sugar dissolves. Cover; chill.
  • Serve over ice; garnish with grapes and mint if desired.

  • 1. Put the prepared blackberries, pineapple chunks, mandarin oranges and mandarin juice, frozen yogurt, honey, coconut milk and ice cubes in the blender and process until smooth and creamy.
  • 2. Pour into a chilled glass, garnish with pineapple and serve immediately.

1 c blackberry, frozen
1 c pineapple chunk (fresh or frozen)
11 oz mandarin oranges, not drained (1 can)
1 c frozen yogurt, mango & peach
3 Tbsp honey, liquid
1/3 c coconut milk
8 ice cubes
4 pineapple chunks (garnish)

  • Toast coconut on cookie sheet in 325 degree oven for 5 to 7 minutes or until browned - check & stir several times after the first four minute. Set aside to cool.
  • Beat egg whites and sugar until thick and sugar is dissolved.
  • Fold in coconut milk, crushed pineapple and toasted flaked coconut. Mix well.
  • Freeze according to manufacturers's instructions for the ice cream machine.
