Baked Three-Cheese Macaroni image

Steps:

  • Preheat oven to 350°. Cook macaroni in a 6-qt. stockpot according to package directions for al dente. Drain; return to pot., In a large saucepan, melt 6 tablespoons butter over medium heat. Stir in flour until smooth; whisk in warmed milk. Bring to a boil, stirring constantly; cook and stir 2-3 minutes or until thickened., Remove from heat; stir in Gruyere and cheddar cheeses, salt, pepper and nutmeg. Add to macaroni, tossing to coat., Transfer to a greased 13x9-in. baking dish. Toss bread crumbs with Parmesan cheese and melted butter; sprinkle over casserole. Bake, uncovered, 30-40 minutes or until bubbly and top is golden brown.

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente. Drain.
  • Meanwhile, cook ground meat and onion in a skillet over medium heat, stirring frequently, until meat is browned. Stir in pasta sauce, reduce heat, and simmer for 15 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish. Layer the ingredients in the prepared baking dish as follows: half of the cooked pasta, all the provolone cheese, all the sour cream, half of the sauce mixture, remaining pasta, mozzarella cheese, and remaining sauce mixture. Top with grated Parmesan cheese.
  • Bake in preheated oven for 30 minutes, or until bubbly.

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter a 9-by-13-inch baking dish.
  • Cook the spaghetti in a large pot of boiling salted water until al dente. Drain well and spread the spaghetti on a baking sheet; let cool.
  • In a large bowl, toss the fontina with the Gruyere and mozzarella. Spread half of the spaghetti in the prepared baking dish in an even layer. Sprinkle half of the mixed cheeses and half of the Gorgonzola over the spaghetti and season with salt and pepper. Repeat with another layer of spaghetti, mixed cheeses, Gorgonzola and salt and pepper.
  • Bake the spaghetti in the center of the oven until the top is golden brown, about 40 minutes. Let cool slightly before cutting into squares and serving.

  • Bring a large pot of salted water to a boil. Add macaroni and boil, uncovered, until just tender to taste. Drain, rinse with cold water and set aside.
  • Preheat oven to 350 F (180 C).
  • In a large pot, melt butter over medium heat and add flour. Stir with a wooden or non-reactive spoon until mixture has a lightly nutty aroma but no colour, about 5 minutes.

  • In a small saucepan over medium heat, add your whole milk and the bay leaf. Heat the milk just until small bubbles form around the edges of the pan, then remove from heat and cover.
  • Place another saucepan – a medium-sized one this time – over medium heat and add the butter. When the butter has completely melted and starts to foam a bit sprinkle in the flour. Stir the flour constantly as it cooks until it thickens into a loose paste, which will take about 2 minutes. We’re not making gravy, don’t expect it to thicken up the same.
  • Remove the bay leaf and stir the milk into the flour paste. Sprinkle in the salt, pepper, and nutmeg then reduce the heat to low. Continue to cook for 2 more minutes, then remove from heat. Gently fold in the Parmesan and Pecorino Romano, then cover and set the pot aside. It will thicken more as it sits.
