This is a fresh summer-time salad that is inexpensive and easy to make. This salad can be made up the day before and is always a crowd pleaser.

Steps:
- Heat a heavy-bottomed pan over medium heat. Stir the almonds and 3 tablespoons sugar together in the skillet; cook until the sugar has melted and coats the almonds; 15 to 20 minutes. Set aside.
- Whisk the vegetable oil, vinegar, hot sauce, 2 1/2 tablespoons sugar, salt, and pepper together in a bowl. Toss the spring mix, oranges, strawberries, celery, onion, and parsley together in a large mixing bowl; drizzle the vegetable oil mixture over the lettuce mixture and stir gently to coat. Sprinkle the toasted almonds over the salad to serve.

- Dissolve unflavored gelatin in cold water. In a medium saucepan over low heat, heat cream and sugar until sugar dissolves. Stir in gelatin mixture until dissolved. Remove from the heat; stir in sour cream and vanilla. Pour into a 2-qt. glass bowl; chill until firm. Dissolve strawberry gelatin in boiling water. Drain orange liquid into strawberry gelatin; blend well. Gently stir in strawberries until thawed. Pour over cream layer; arrange oranges on top (allow to settle) and chill until firm.

- Wash, hull and quarter strawberries. Place in medium bowl.
- Cut ends off an orange. Place orange cut side down and cut down outside edges removing peel and white pith. Repeat with other oranges.
- Cut orange sections from between membranes into bowl with strawberries. Squeeze juice out of membranes into bowl.
- Add brown sugar and stir.
- Cover and let sit for 30 minutes at room temperature.
- Chop mint and add to bowl. Stir to combine and serve immediately.

- Add strawberries, sliced fennel, orange zest, and fennel fronds to the bowl of orange segments and toss together gently. Stir in the lemon juice and olive oil, and season with salt and pepper. Add lettuce, toss, and serve.
