A Mexican-style torta is just like a burrito, except the "wrapper" is a hollowed-out roll instead of a tortilla Totally vegetarian. Here it's filled with mashed spiced black beans, a quick guacamole and melted Monterey Jack on the bean side of the sandwich. Serve with grilled corn on the cob or Spanish rice. Steps:
- Mash beans, salsa, jalapeno and cumin in a small bowl.
- Mash avocado, onion and lime juice in another small bowl.
- Cut baguette into 4 equal lengths.
- Split each piece in half horizontally.
- Pull out most of the soft bread from the center so you're left with mostly crust.
- Divide the bean paste, avocado mixture and cabbage evenly among the sandwiches.
- Cut each in half and serve.

Steps:
- Brown beef and onion in pan, Drain.
- Add other ingredients, except cheese.
- Simmer 10 to 15 minutes.
- Place 1/4 cup mixture in a 9x13 baking dish.
- Place a layer of tortillas on top.
- Add more mixture, then cheese.
- Repeat the same until finished.
- Bake at 350 for 25 minutes, until cheese is bubbling.
- Optional: Before serving add last layer of tortillas spread 1 to 1 1/2 cups sour cream over mixture.

Steps:
- Heat 1 tablespoon of olive oil and butter in a skillet over medium-low heat, and stir in the shiitake mushroom, shallot, salt, red pepper flakes, and sage. Cook and stir until the shallot is translucent, about 5 minutes. Mix in the turkey and vermouth, and stir for a minute or two just to heat; remove from heat.
- Beat the eggs with a fork in a bowl until well blended, and season with a pinch of salt and white pepper. Heat 2 teaspoons of olive oil in an omelette pan over medium heat until hot, and pour the beaten eggs into the pan. Use a spatula to gently stir the eggs just until they begin to set, 1 to 2 minutes; shake the pan to cover the bottom completely with egg. Smooth out the top of the partially set eggs with the spatula, cook just until the bottom is firm and the top is still slightly soft, and turn off the heat.
- Spoon turkey filling into the center of the omelette, filling about the middle third of the omelette; dot with small dollops of creme fraiche. Do not overfill omelet. With spatula, fold the upper third of the egg over the filling, and gently tip the skillet and shake the omelette towards the edge of the skillet. With spatula, fold the omelet over one more time, forming a loose cigar shape, and gently tip the omelet onto a serving plate.

- Combine turkey, bell pepper, onion, and garlic in a 3 1/2 quart slow cooker.
- In a small bowl, mix brown sugar, chili powder, cornmeal, cocoa powder, cumin, oregano, salt, cinnamon, and red pepper. Stir into turkey mixture.
- Whisk tomato sauce with water and peanut butter; pour over turkey mixture, mixing well.
- Cover and cook on LOW 4 to 5 hours. Serves 4.

- Using your fingers, gently separate skin from breast meat starting at neck. Rub outside of turkey all over with cut sides of lemon; set lemon aside. Season inside and out all over with salt and pepper (be generous with the salt). Rub butter over breast meat underneath skin.
- Mash oil, achiote paste, oregano, granulated garlic, and cumin in a small bowl to a smooth paste. Rub an even layer all over outside of turkey. Tie legs together with kitchen twine. Let sit at room temperature 2 hours, or set on a wire rack set inside a rimmed baking sheet and chill, uncovered, up to 2 days.
- Place a rack in bottom third of oven; preheat to 450°. Place onion, garlic, celery, and reserved lemon inside turkey cavity. Place turkey in a large roasting pan on top of a flat or V-shaped wire rack. Pour 1½ cups water into pan. Roast turkey, rotating once if it is browning unevenly, until skin is browned all over and beginning to crisp, 25–30 minutes. Reduce oven temperature to 350° and continue to roast turkey, basting with pan juices every 30 minutes, adding more water by ½-cupfuls if completely evaporated, and rotating pan if browning unevenly, until an instant-read thermometer inserted into the thickest part of breasts registers 150°–155° and thickest part of thighs registers 165°–170°, about 1½ hours longer. Transfer turkey to a cutting board; let rest 30–60 minutes before carving. (If making gravy, deglaze pan and use drippings.)
