TILAPIA (OR SALMON) VERACRUZ

I love preparing fish during the week as it is quick & easy (start to table in less than 30 minutes). Flavors reminiscent of Veracruz, Mexico. Spicy (but not hot--unless you want it that way). Enjoy!

TILAPIA (OR SALMON) VERACRUZ image

Steps:

  • 1. Preheat oven to 425 degrees. Generously grease 8" cast iron skillet or 8" square baking pan. Very lightly salt and pepper fish fillets
  • 2. Combine Rotel, olives, garlic, cumin, black pepper, jalapeno, sugar and 2 tsp EVOO and set aside. (Sugar counteracts acidity in the tomatoes). **You could substitute plain diced tomatoes or about 1-1/2 cups of grape or cherry tomatoes, halved in lieu of the Rotel.
  • 3. Put remaining 2 tsp EVOO into skillet & heat on medium high on stove top. When it just starts to smoke, place fish, "pretty side" down, and lightly sear for 1-2 minutes. Turn fish. Remove from heat and pour tomato mixture over fish. Place in preheated oven about 4-5 minutes until fish flakes easily. Serve hot with your favorite pasta or rice and a veg or a beautiful, mixed garden salad.

2 6 oz fish fillets (tilapia, salmon, halibut, catfish, crappie)
2 Tbsp diced salad olives (green) (or capers)
1 can(s) rotel diced tomatoes with green chiles
1/2 tsp ground cumin
1/2 tsp ground black pepper
1 fresh jalapeno, diced fine (optional)
4 tsp extra virgin olive oil (divided use)
1/8 tsp sea salt
1 Tbsp minced garlic (or 2 cloves, minced)
1/2 tsp granulated sugar

Abuelo's Tilapia Veracruz image

Steps:

  • Season 2 Tilapia filets with Lawry's seasoned salt.
  • Place 1 tablespoon clarified butter in sauté pan.
  • Preheat pan over medium flame.
  • Place Tilapia filets in sauté pan with the skin side facing up.
  • Sauté for 1 minute.
  • Turn filets and place in oven at 400F for 2 minutes to finish.
  • Prepare Veracruz sauce and ladle sauce over fish, leaving the ends of the fish exposed.
  • For the sauce:.
  • Heat butter over medium heat.
  • Add garlic, scallops and shrimp.
  • Saute for 1 minute.
  • Add tomatoes, poblano strips and seasoning. Continue cooking for 30 seconds.
  • Add white wine to mixture and reduce.
  • Add Bloody Mary Mix, chile guero and olives. Continue cooking for 1 minute.
  • Remove from flame and pour over fish.
  • Note: Make sure the edges of the fish are not covered with sauce. Sauce should be bright and loose, not thick and dry.

VERACRUZ-STYLE RED SNAPPER

I like red snapper for this, but any white, flaky fish will work. By the way, many Veracruz-style fish recipes call for pickled jalapenos, but I think there's plenty of acidity in this from the lime and tomatoes, so I like the fresh pepper a little more.

Veracruz-Style Red Snapper image

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat olive oil in a skillet over medium heat. Stir in onion; cook and stir until onions begin to turn translucent, 6 to 7 minutes.
  • Cook and stir in garlic until fragrant, about 30 seconds. Add capers and caper juice; stir to combine.
  • Stir in tomatoes, olives, jalapeno pepper, . Cook and stir until jalapeno pepper softens and tomatoes begin to collapse, about 3 minutes. Remove from heat; stir in oregano.
  • Drizzle 1 teaspoon olive oil into a small baking dish. Sprinkle in 1 tablespoon of the tomato-olive mixture. Top with 1 snapper fillet, salt, black pepper, and cayenne pepper. Top with more filling and juice from 1 lime. Repeat with remaining snapper fillet, seasoning, and lime juice in a second baking dish.
  • Bake in the preheated oven until fish is flaky and no longer translucent, 15 to 20 minutes.

Rick Bayless' Grilled Salmon Vera Cruz with Lemon-and-Thyme-Scented Salsa image

Steps:

  • 1. Prepare the sauce: Place oil in a saucepan over medium heat. Add the onion and cook, stirring, until just beginning to brown, about 5 minutes. Add the garlic and cook 1 minute more. Raise the heat to medium-high and add the tomatoes, chopped thyme, lemon zest, and half of the olives, capers, and peppers. Simmer briskly, stirring, for about 5 minutes to evaporate some of the liquid. Reduce the heat to medium-low, stir in 1 cup water and simmer for 15 minutes. Taste and season with salt. Cool.
  • 2. Preheat a gas grill to medium-high or light a charcoal fire and let it burn just until the coals are covered with gray ash and very hot. Reduce the heat on one side of the gas grill to medium-low or set up the charcoal grill for indirect cooking by banking all of the coals to one side, leaving the other half of the grill empty. Set the cooking grate in place, cover the grill and let the grate heat for 5 minutes.
  • 3. Oil the grill and both sides of each salmon steak; sprinkle fish with salt. Cook the salmon over the hottest part of the grill for about 4 minutes, until nicely browned underneath. Carefully flip over the fish onto the cooler side of the grill; cook 2 to 4 minutes more for medium-rare.
  • 4. Spoon the sauce into a deep platter and nestle the fish in it. Let stand at room temperature for about an hour to bring together the flavors of the fish and the sauce.
  • 5. To serve, sprinkle the fish with remaining olives, capers, and peppers; garnish with the thyme sprigs. Serve immediately.
