MIXED BERRY TIRAMISU

Because I love tiramisu, I came up with this deliciously refreshing twist on the traditional coffee-flavored Italian dessert. Fresh softened berries star with crisp ladyfinger cookies and mascarpone cheese. Mixed Berry Tiramisu image

Steps:

  • Place berries in a large bowl. Mix 1/3 cup sugar, orange zest and orange juice; toss gently with berries. Refrigerate, covered, 45 minutes., Beat cream until soft peaks form. In another bowl, mix mascarpone cheese, vanilla and remaining sugar. Fold in whipped cream, a third at a time., Drain berries over a shallow bowl, reserving juices. Dip ladyfingers in reserved juices, allowing excess to drip off; arrange in a single layer on bottom of a 13x9-in. dish. Layer with half the berries and half the mascarpone mixture; repeat layers, starting with ladyfingers., Refrigerate, covered, overnight. If desired, top with additional berries before serving.

Steps:

  • Reserve 1-1/2 tsp. orange zest for garnish. Melt white chocolate as directed on package; cool slightly.
  • Beat Neufchatel, sugar and melted chocolate in large bowl with mixer until blended. Gradually beat in milk. Gently stir in 1 cup COOL WHIP and remaining orange zest.
  • Arrange 13 cookies in single layer on bottom of 8-inch square pan; drizzle with half the coffee. Cover with half the Neufchatel mixture. Repeat all layers. Refrigerate 8 hours.
  • Spread dessert with remaining COOL WHIP, then sprinkle with remaining orange zest just before serving.

Quick Tiramisu image

Steps:

  • Get yourself a medium deep bowl or dish about 8-10 inches in diameter and arrange your ladyfingers snugly in layers on top of each other. Sweeten your coffee with 2 tablespoons of the sugar. Pour the coffee over the ladyfingers, making sure the top layer is completely covered - you'll see the coffee being sucked up by the ladyfinger. While that's soaking, put your mascarpone into a bowl and whisk it up with the rest of the sugar.
  • Score the vanilla beans lengthwise and scrape the seeds out into the bowl of mascarpone, keeping the beans for making vanilla sugar if you want to. Continue whisking and as you do so, drizzle in the vin santo or sherry. You want to get the mixture to a loose, shiny consistency. If it's still too thick you can use a little of the orange juice to loosen it before you squeeze the rest of the juice over the ladyfingers. Smear the vanilla mascarpone over the ladyfingers and either grate all the chocolate over it or make shavings using a knife or a peeler. Sprinkle lightly with a little finely grated orange zest and keep in the fridge until you're ready to serve.

1 cup good strong coffee, freshly brewed
4 tablespoons sugar
1 pound 2 ounces mascarpone
2 vanilla beans
1/2 cup vin santo or sweet sherry
Zest and juice of 1 orange
3 1/2 ounces best-quality bittersweet chocolate (70 % cocoa solids)

CLASSIC TIRAMISù

Done correctly, a classic tiramisù can be transcendent. A creamy dessert of espresso-soaked ladyfingers surrounded by lightly sweetened whipped cream and a rich mascarpone, tiramisù relies heavily on the quality of its ingredients. If you don't have a barista setup at home, pick up the espresso at a local coffee shop, or use strongly brewed coffee. As for the ladyfingers, make your own or buy them, but keep in mind that store-bought varieties can range from soft and spongy (like angel food cake) to hard and crunchy (like biscotti). Both kinds will work here, but if you're using the softer variety, stick to a light brushing of espresso, instead of a deep dip.

Classic Tiramisù image

Steps:

  • Using an electric mixer in a medium bowl, whip together egg yolks and 1/4 cup/50 grams sugar until very pale yellow and about tripled in volume. A slight ribbon should fall from the beaters (or whisk attachment) when lifted from the bowl. Transfer mixture to a large bowl, wiping out the medium bowl used to whip the yolks and set aside.
  • In the medium bowl, whip cream and remaining 1/4 cup/50 grams sugar until it creates soft-medium peaks. Add mascarpone and continue to whip until it creates a soft, spreadable mixture with medium peaks. Gently fold the mascarpone mixture into the sweetened egg yolks until combined.
  • Combine espresso and rum in a shallow bowl and set aside.
  • Using a sifter, dust the bottom of a 2-quart baking dish (an 8x8-inch dish, or a 9-inch round cake pan would also work here) with 1 tablespoon cocoa powder.
  • Working one at a time, quickly dip each ladyfinger into the espresso mixture -- they are quite porous and will fall apart if left in the liquid too long -- and place them rounded side up at the bottom of the baking dish. Repeat, using half the ladyfingers, until you've got an even layer, breaking the ladyfingers in half as needed to fill in any obvious gaps (a little space in between is O.K.). Spread half the mascarpone mixture onto the ladyfingers in one even layer. Repeat with remaining espresso-dipped ladyfingers and mascarpone mixture.
  • Dust top layer with remaining tablespoon of cocoa powder. Top with shaved or finely grated chocolate, if desired.
  • Cover with plastic wrap and let chill in the refrigerator for at least 4 hours (if you can wait 24 hours, all the better) before slicing or scooping to serve.

  • In a small saucepan, place the egg yolks and sugar; mix well while cooking at low heat simmer for approximately 4 minutes. Don't let it boil. When it is done, let it cool down.
  • Meanwhile, dissolve the instant coffee in hot water.
  • Mix marscapone and 2 Tbsp. of coffee mixture until creamy.
  • Dip ladyfingers in remaining coffee and place in glass dish. Add a layer of creamed mixture, another layer of ladyfingers, and another layer of creamed mixture, ending with a layer of ladyfingers.
  • When done, spread a thin layer of whipped topping.
  • Cover tiramisu with plastic wrap and refrigerate for at least 5 hours.
  • Decorate with chocolate and orange zest.

Steps:

  • Mix the orange juice and liqueur. Arrange sponge fingers in the bottom of the serving bowl. Pour over the orange/liqueur juice then cover with the amaretti biscuits and orange segments.
  • Beat together the egg YOLKS, mascarpone cheese and sugar. In another bowl whisk the egg whites until stiff and fold into the mascarpone mixture using a metal spoon. Spread this mixture over the top of the amaretti biscuits and decorate with the toasted almonds.
  • Chill slightly before serving.

Steps:

  • Make a zabaglione by beating the egg yolks and 150gms sugar in the top of a double boiler until ivory coloured.
  • Whisk gently over simmering water until the mixture begins to thicken.
  • Allow to cool.
  • Take the juice and zest of an orange and cook till the zest is soft and the juice is thick.
  • Mix it in the zabaglione.
  • Soften gelatine in cold water.
  • Add it to the zabaglione.
  • Blend mascarpone cheese with the zabaglione.
  • Add the cream slowly.
  • Make a coffee mixture with coffee, sugar and Amaretto.
  • Cool it.
  • Dip the sponge fingers into the coffee mixture.
  • Let it soak in the coffee syrup mixture.
  • Arrange in a single layer in the bottom of a 9 inch bowl.
  • Cover them with half the zabaglione.
  • Repeat the layers, finishing with the zabaglione.
  • Refrigerate for several hours before serving.
